Elderton's Command Shiraz is one old school Barossa Shiraz. Named because of the special treatment the quality fruit 'commanded', this is a Shiraz of foreboding concentration. The fruit for this 'Excellent' Langton's classified Australian icon comes from the century old Elderton vineyard located on the banks of the Para River and is matured in a mixture of French and American oak. This allows the wine to retain its driven power while also giving the wine a level of complexity and balance unique to this region and producer. Elderton's Command can be enjoyed by lovers of ripe and rich fruit early, yet will reward the truly patient with a wine of true beauty when left alone to mature for a decade.

McLaren Vale is well known for its ability to make full bodied red wines, in particular concentrated Shiraz, and this deluxe wine is a perfect example.Deep, dark red. Plum, cherry compote and cedar oak aromas. Ripe, dense and juicy with loads of dark berry, plum and rum and raisin chocolate, ripe velvety tannins and toasty coconut oak. A deluxe wine from the start to the long, seamless finish.

Teusner Albert Shiraz is made from old vines in the northern Barossa; rich black fruits and tarry cassis with smoky undertones, the finish is long and luscious. Could easily be cellared for the medium term.

A true icon of Australian wine first created by the legend himself, Max Schubert, Peter Gago is quoted as saying 'Through thick and thin, across all vintages, Bin 389 always delivers - benefitting from over half a century of practice!

The Barossa is home to some of the world’s oldest ungrafted Shiraz vines. The vines were planted in a pre-mechanized and pre-irrigation era where site selection was everything. Dry grown as bush vines with only the best soils, vine material and sites surviving the first years, and only the absolute pinnacle surviving the 100 years thereafter. The low-yielding ‘Centenarian’ vines, noted for their intensity of flavour, were planted more than a century ago around the time construction of the Château itself began. The select parcels are hand-picked and fermented in small open fermenters with hand plunging four times daily before careful basket pressing to extract tannin and colour. Their Giant Squid Ink Shiraz shows brilliant purple hues and violets on the nose and with brilliant use of French Oak, the palate is smooth, velvety and concentrated with all the berry fruit one can handle.

Small parcels of fruit from old dry grown vines are selected for their intensity of flavour and individual qualities. Complex and concentrated this classic Barossan will continue to develop for a decade at least.

Coming from one of the best vintages in recent Barossa history, the Old Block from St Hallett shows what careful vineyard management can do for a wine. Rich, dark and conerntrated but with seamless tannin intergration.

Dark purple red in colour, the nose coconut fudge and chocolate plump, the palate very full bodied and large with fine tannins and a warm finish. Soul Growers' fruit is destemmed in open fermenters that hold anywhere from half a tonne, to five tonnes. After seven to ten days of fermentation the fermenters are drained and placed by hand into basket presses. The fruit is then gently pressed for about 18 hours to ensure the flavour and aromas are carefully extracted without releasing harsh and bitter tannins.After pressing, the winemakers settle the wine in tanks before filling the barrels ready for ageing. The winery's renowned reds generally spend 18 to 24 months on oak. To round off the process, each individual barrel is blended and benchmarked prior to being settled in bottles, without any fining or filtration.

The Torbreck Descendant has a powerful nose of blackberry and tar complemented by floral lavender and a violet lift. Full-bodied and concentrated with ripe silky tannins and plenty of extract this wine has a great future ahead.

One of the benchmarks of Barossa Shiraz, Peter Lehmann's Stonewell is a classic example of the rich concentrated old vine style. While bold on the palate, there is always an inherent complexity to the Stonewell that enables it to be compared with all of the great Australian wines produced today.
