Select parcels of premium McLaren Vale Shiraz were chosen from 4 different vineyards for this wine, each being crushed separately. Following extended barrel fermentation over 18 months, the four parcels were blended to create this superb wine.

McLaren Vale is well known for its ability to make full bodied red wines, in particular concentrated Shiraz, and this deluxe wine is a perfect example.Deep, dark red. Plum, cherry compote and cedar oak aromas. Ripe, dense and juicy with loads of dark berry, plum and rum and raisin chocolate, ripe velvety tannins and toasty coconut oak. The Langhorne Creek region is known to produce good Shiraz/ Cabernet Blends and our Quintessential has Cabernet and Shiraz blended together equally by our winemaker Peter Douglas. It is a perfect match and will age gracefully for many years if you can allow yourself to leave them in the cellar long enough.Alternatively enjoy it now amd keep a few for later. Vineyard This Estate owned single vineyard really is the epitome of what defines one of the greatest vineyards in Australia, where the famous Black Bay of Biscay Clay soil ensures fantastic depth of colour and concentration. Positioned at about 120m above sea level and 8kms inland this North/ South facing vineyard is in the heart of McLaren Vale. We pride ourselves in sustainable viticulture practices and having true respect for the value of our vineyards and the fruit they create. Monitoring and measuring the vines is a crucial part of maintaining fruit quality of this level with a key focus being on the soil health and how this impacts the vine, the fruit and in turn the wine and the experience. The fruit for this wine is picked a little earlier to ensure a slightly lower alcohol level. Winery In the winery The Descendant of Squid Ink Shiraz fruit is treated with utmost respect, ensuring quality from start to finish. With a 2 day cold soak prior to a slow cool fermentation for gentle extraction colour, flavour and tannin extraction are closely monitored with different fermentation cap management applied accordingly. Following fermentation, the wine is then matured in a special selection of the finest 4 year old seasoned American oak Hogshead (300L) oak barrels for 9 months. Maturation 9 Months in well-seasoned 4 year old American Oak, Hogshead (300L) oak barrels. Colour Deep red with vibrant purple hues. Nose Deep dark fruits with some black olive, earthy complexity entice the senses followed by complementing dusty oak characters. Palate Fresh vibrant fruit coats the mouth, complimenting the gentle, soft furry tannins and spice that line the mouth and leave a lasting impression. Cellaring Drink now or cellar for 7+ years.

A tight and complex bouquet of dried plum, fresh almond, blood plum, smoked meats, concentrated cherry, blueberry preserve, ginger, glazed prune and clove. In all pretty it’s thrilling, what greets you on the palate flows through to the palate, with a band of deep but amazingly light fruits, an ironstone searing penetration builds up and then slowly flows away, the fruit depth here is admiral and the balance is so pure that this will age quite effortlessly for an extended time.

The Syrah patch was planted in the mid 1940’s and yields a microscopic 250-300 dozen per annum. The Sandown Syrah patch is west facing and features significant ironstone content. The site yields a signature incense like spice throughout the fruit and makes for a highly exotic expression of Blewitt Springs Syrah. Cola, sarsaparilla, incense, blackcurrant, blueberry, black olive, Italian leather, Sandalwood and roasted meat are all on display with recessed power woven throughout this highly perfumed and multi-layered, seamless example.

This Shiraz delivers bold notes of blackberry along with rich aromas of blackcurrant. Touches of subtle oak, aniseed, and pepper spice complete the palate for a layered and textured structure.

It’s fabulously fruited and perfumed on the nose showing Black Doris plum, cherry, mixed spice and rich floral aromas, followed by a concentrated palate delivering considerable weight and persistency. It’s succulent and fleshy with a prolonged satisfying finish. At its best: now to 2036.
