Sourced and grown in the Adelaide Hills, this is a fine example of how good Chardonnay from this region can be. This is a blend of 3 different cultivars of the Chardonnay grape. Bunch pressed and in part wild fermented. Partial malolactic fermentation imparts further complexity. A beautifully textured and complex wine.

The 2008 marks the 25th anniversary of Dalwhinnie Chardonnay in the Pyrenees in western Victoria, and the wine is still not missing a beat. With less oak used now than in previous vintages, the wine exhibits magnificent citrus and mineral flavours and aromas with a delicate honey flavour notes and texture. A truly elegant wine.

A classic Peninsula Chardonnay with richness and complexity and underlying elegance. Peach and tropical fruit aromas combine well with nutty creamy oak and the palate is full flavoured and long.

Ageing for a minimum of 24 months on lees adds complexity to the fresh citrus, red apple and spring blossom aromas. The palate is crisp with a lingering, mouth-watering finish. A persistent fine bead and creamy mousse gives extra lift to these delicious aromas and flavours. Winemaking: Different parcels of fruit are all hand-picked and whole bunch pressed separately into tank for settling. Fermentation of these small batches lasts around 12 days and in 2012 only some parcels of wine were putthrough malo-lactic ferment to soften the acidity and add complexity. Yabby Lake Chardonnay is a fine, elegantly structured Chardonnay which is still developing. Subtle, toasty oak provides a background for the citrus and white peach flavours and the acidity lingers and extends the finish.

Of all the premium white wines we sampled last year; it was the Soumah Hexham Chardonnay that rose to the top. This top class Yarra Valley Chardonnay features the perfect amount of oak and a moreish creaminess. Produced from small single vineyard plantings in the Warramate foothills of the Yarra Valley, Soumah Hexham Chardonnay is brilliant now but patience will be rewarded if cellared up to 5 years if you can keep your hands off it that long. One of the real movers and shakers of the industry in recent times, Soumah is without a doubt one to keep a very close eye on. This is a super complex and extremely alluring example. Produced from small single vineyard plantings in the Warramate foothills of the Yarra Valley, outstanding fruit quality works hand in hand with barrel derived complexities. This complexity around a mid to full bodied core lends its self just perfectly to seafood with the traditional butter sauce accompaniment.

The bouquet is an enticing mix of white field flowers, grapefruit, pear essence and brioche. Enriched with layers of nougat and nut-meal, the palate's fine, creamy texture is supported by toasted vanillin oak. A bright citrus and chalky lactic acidity adds restraint and length to finish the wine. 'This latest release from the partnership of Jeff Burch and Burgundian winemaker Pasca Marchand is one of the best. Comes off a high point in the Porongurups, with the fruit being naturally fermented and then given 10 months on yeast lees to gather complexity. Fruit for this wine is sourced from nine rows of P58 clone chardonnay planted on East West rows directly outside the winery doors. Once harvested the fruit was whole bunch pressed to French oak barriques (50% new) with Indigenous yeast fermenting the un-clarified juice. Barrel maturation took place on lees over the next ten months during which the chardonnay was stirred fortnightly.
