Sourced and grown in the Adelaide Hills, this is a fine example of how good Chardonnay from this region can be. This is a blend of 3 different cultivars of the Chardonnay grape. Bunch pressed and in part wild fermented. Partial malolactic fermentation imparts further complexity. A beautifully textured and complex wine.

Yabby Lake Chardonnay is a fine, elegantly structured Chardonnay which is still developing. Subtle, toasty oak provides a background for the citrus and white peach flavours and the acidity lingers and extends the finish.

The bouquet is an enticing mix of white field flowers, grapefruit, pear essence and brioche. Enriched with layers of nougat and nut-meal, the palate's fine, creamy texture is supported by toasted vanillin oak. A bright citrus and chalky lactic acidity adds restraint and length to finish the wine. Comes off a high point in the Porongurups, with the fruit being naturally fermented and then given 10 months on yeast lees to gather complexity. Devil's Lair is one of Margaret River's most respected wineries. This superbly structured Chardonnay displays lingering flavours influenced by top quality French oak; a beautiful textured mouth feel and tight acidity.

Ageing for a minimum of 24 months on lees adds complexity to the fresh citrus, red apple and spring blossom aromas. The palate is crisp with a lingering, mouth-watering finish. A persistent fine bead and creamy mousse gives extra lift to these delicious aromas and flavours. Winemaking: Different parcels of fruit are all hand-picked and whole bunch pressed separately into tank for settling. Fermentation of these small batches lasts around 12 days and in 2012 only some parcels of wine were putthrough malo-lactic ferment to soften the acidity and add complexity. Cambria was originally part of the Tepusquet Vineyard. Planted between 1970 and 1971, this ambitious venture helped establish Santa Barbara County as a world-class wine producing region. The Cambria portion of property was purchased in 1986 by Barbara Banke. Today, Cambria is still 100% family owned and the wines are 100% estate-grown. Ripe fruit, floral and spice aromas dominate the nose of the Katherines Vineyard Chardonnay. Grapefruit, pineapple, white peach, citrus blossom, and apple flavors are balanced by a bit of wet stone, subtly oak spice and bright acid.
