The grapes used to craft The Katana Chardonnay were handpicked, chilled overnight, and whole bunch pressed. The juice was rough settled, and transferred to French oak barriques for fermentation. This process led to the creation of a pale straw coloured wine with golden yellow highlights along the edges. This wonderful Chardonnay presents a supple core of citrus blossom and white stone fruit characters, enhanced by mineral notes. The juicy palate contains flavours of bright fruits and French oak supported by crisp acidity, ending in a lively and captivating climax. This alluring white wine can be enjoyed within 5 years from vintage. Drink it with potato soup, roasted vegetable pizza, and chorizo and sweet potato risotto.

Sourced from vineyards in Lenswood and Balhannah and then fermented in a combination of one and two year old French oak as well as stainless steel. Medium straw in colour this wine by Sidewood displays lifted white peach, fig, pear and pistachio nuts on the nose. This barrel fermented Adelaide Hills Chardonnay offers superbly structured characters. It is tight and lean, laced with citrus lime and tropical fruit characters. Some lovely subtle complexities from careful oak maturation on lees include nutmeg, sage spice and pistachio flavours which linger on the after taste. A lovely crisp wine now, that will benefit from some short term cellaring once bottled. Serve with Asian style broth, mushroom based dishes or Lobster bisque is a great match to this Chardonnays complexity in flavour, but finesse in structure.
