Fruit for this wine was hand-selected from our single-site Yarra Valley vineyard. The wine was aged in both seasoned French barriques and state of the art stainless steel tanks for four months. Pale straw in colour, notes of green apple and citrus with hints of blossom. The palate is generous with firm acidity.

The two main components of our Vodka; water & grain spirit were meticulously selected from local produce, based on their aromatic intensity, richness, structure.Water was sourced from pristine Blue Mountains ranges in New South Wales which is specifically high in Zinc giving Ancient Wisdom Vodka its unique viscous silky taste.While the wheat grain strain selected is explicitly grown in winter in the high moisture-storing capacity of the clay-based soils of southern Queensland, which plays a significant part in imparting a delicate earthy nose.The vodka is then triple distilled before being gravity fed through Silver and heavily charred Oakwood to achieve the desired viscous mid-palate imparting a lingering earthy finish. Delicate pale yellow with an edge of green in colour, this sparkling wine is made from a blend of Chardonnay and Pinot Noir. The bouquet is bright and driven by lemon, pear skin and an exotic subtle marzipan perfume mixed with suggestions of baked French pastry. The palate is lively and also exhibits fresh lemon, Granny Smith apples complemented by an interwoven chalky minerality. This wine has spent 3 years in bottle providing yeast autolysis influences on the palate and provides further complexity to this traditionally made sparkling wine from Zonzo Estate.

Beautiful blackberry, spice and cassis are the hallmarks of this variety. The Zonzo Reserve has captured all these characters and more on the nose and pallet.The palate compliments the perfume of this wine with lovely cool climate Yarra Valley characters of tobacco leaf, cassis and black fruits. Beautiful oak influences the palate and integrates with the fruit and tannin profile to deliver an elegant yet rich Cabernet.

2017 gifted the Yarra Valley with superb growing conditions, and the resulting wines, like this beauty, have wonderful harmony, balance and depth.Medium garnet colour. Dark plummy fruit with spicy complexity and subtle leaf and graphite. Medium-weight yet plush and focussed with plum, spice and undergrowth complexity, cocoa and subtle mocha depth, subtle secondary characters and spicy length.

The wine is tightly packed full of black fruit, spice, cloves, and liquorice. The grape tannins are soft and are beautifully integrated into the wine, giving the wine structure and adding power, balance and a savoury richness. Adam Marks established Bress in 2001 with a desire to produce wines with fruit sourced from notable regions and minimal intervention.“We believe certain grape-growing regions are better suited to particular grape varieties than others,” says winemaker Adam Marks. “The French have understood this for several centuries and some Australian wine producers are now embracing this belief.” Bress, located in Harcourt near Bendigo, Victoria, is one such producer. Adam doesn’t restrict himself to sourcing grapes from one specific region; he’d rather make the most of the diversity of climates and soils central Victoria has to offer and looks to the Yarra Valley, Macedon Ranges, Bendigo and Heathcote for the best quality fruit.
