Sliabh Liag Distillery Silkie Irish Whiskey

Sliabh Liag Distillers is the first distilling company in the county for over 175 years, established with the purpose of reclaiming the distilling heritage of Donegal. Two Scatterlings have returned to Sliabh Liag with their Meitheal (work-gang or team) to create a legacy that the whole community can be proud of. Located on the Sliabh Liag peninsula, the distillery is surrounded by one of the world’s most striking landscapes populated by resilient people, steeped in folklore and with a legendary distilling heritage. The Silke Irish Whiskey is the distilleries first step on their ambitious journey. They are in the process of building their distillery but that didn't stop them from producing this top class whiskey. They have sourced a blend of grain and malt whiskeys that when blended together produce a signature soft mouth feel. The end result is a straw gold colour with hints of amber. The nose is malty and fresh, green apples, and opens to a honey butteriness. The palate is soft honey, with hints of brioche, butterscotch, digestive biscuits, orange zest, and stem ginger. It finished warm and elegant.

Proclamation Irish Whiskey is a blend of the finest grain whiskies from across Ireland. Timelessly crafted in small individual batches, offering a liquid of complex yet refined character. The liquid is triple-distilled and aged in new American Oak, offering up a singularly smooth whiskey with a clean taste. Matured in bourbon casks and blended with a touch of sherry-finished malt to give a rounded, toasted finish. The Sexton Single Malt Irish Whiskey

One of the most striking-looking new releases around, this bone-jangling, sepulchral, triple-distilled whiskey was once entombed in oloroso sherry butts. A nose of baked apple and sultana, rolled marzipan, sesame seeds, and roasted spices. Smooth tasting, with dark fleshy fruits, mixed peel, chocolate, walnut; the taut spicy middle section dies back to baked oranges. Finish includes dried fruit, lemon zest and oak spice delight the palate, before finishing with a woody and honeyed sweetness.

Busker Triple Irish Whiskey

Dingle

Awarded Ireland's best gin, Dingle Original Gin contains botanicals from a pristine Kerry landscape, including rowan berry, fuschia, bog myrtle, hawthorn and heather. Macerated for 24hrs, the spirit is distilled in a hand beaten copper still with resulting vapors passing through a flavour basket. The distillate is then cut with pure water drawn from a well 240ft below the distillery. Each bottle is hand filled and numbered by batch. Best served over ice with tonic and a wedge of fresh orange.
