The fruit is sourced from the cool climate region of Tasmania where Ed Carr (Gourmet Wine Traveller Winemaker of the Year 2011) and his team produce an outstanding wine of incredible complexity and character resulting from extended maturation on yeast lees. The cool slopes of the Tamar Valley region, located in northern Tasmania, have the potential to produce great sparkling wine. This richly flavoured cuvée made from Chardonnay and Pinot noir by Pirie boasts complexity from barrel-aged base wine and reserve blending. It displays the impact of terroir and the favourable interaction of climate and soil on these vines.

With 10 years on lees it is the patience to allow this wine to mature at its own pace. This excellent sparkling exhibits all the elegance, power and vibrancy that are the hallmarks of world class premium sparkling wine.

The Pirie Late Disgorged is a small batch of the best Sparkling wine of the 2011 vintage and selected for long term lees aging (in this case 10 years). This concentrated and classically structured wine is designed to offer savoury complexity and elegance, with richness of texture. It is showing golden colours although still very bright for the age, with characters of freshly baked sour dough bread and a lemon curd freshness. The palate is powerful, but the prominent cool-climate Tasmanian acidity creates a perfect balance. Ready to drink now.

Devil's Corner Chardonnay shows some up-front ripe stone fruit, citrus characters and hint of subtle spiciness. It shows excellent flavour intensity with great persistence and a refreshing finish.

Devil's Corner Resolution Pinot Noir is a full bodied style of Pinot Noir showing blackberry, sour cherry and hints of cedar from the quality French oak. The wine displays a juicy fruit driven middle palate with a crisp savoury texture and fine grained tannins. Given the wines depth and structure it is well worth putting some away in the cellar and looking at it again in 5 to 8 years.

Tasmanian Chardonnay at its best, lifted aromas of peach and pear with defined elegant oak.
