The fruit is sourced from three sites around the Peninsula which has the spice and black pepper characters, that are characteristic of this wine. Paringa Estate's The Paringa Shiraz is a multi-trophy winning wine that has been carefully selected from barrels prior to bottling due to the stand-out quality that was easily identifiable. Sourced from Lindsay McCall's estate, this Shiraz is almost eternal in flavour length and intensity. Flavours of plum, raspberry, redcurrant are accompanied by black pepper, anise and vanilla. Fine grained and in balance tannins complement the extraordinary fruit weight to deliver a wine that will reward careful cellaring.

Fruit for this wine was hand sorted twice & produced in two ways; one fermenter of whole berries & another of 100% whole bunches. Blended together. Matured in 300-litre hogsheads (roughly 20% new, François Frères). Ten months on lees before bottling, unfiltered. A graceful & savoury expression of Mornington Pinot Noir. Red plum, spice & dark cherry characters. Fine, supporting tannins. A lingering, perfumed finish of amaro spice.

Garagiste's only 100% whole bunch Pinot and the wine also sees a little more new oak than the rest. Expect a lifted yet restrained & complex nose with red fruits, smoke, bacon & thyme notes leading to an intense, deep palate with a core of silky Pinot fruit framed by fine, powdery tannins. A serious Pinot that is delicious now but that will equally benefit from a few years in the cellar.

The wine shows aromas of violets and black fruits including black cherry, black currant and blackberry as well as subtle rose petal and earth.The palate is savoury and firmly structured with primary fruit notes coming to the fore. Food Pairing Any dish that includes canned tomatoes.
