This guys bringing Juniper, and lots of it! Weve done this by using Macedonian berries distilled on our very own Copper Pot Still, named Ron. Who better to compliment our Juniper than the delicate flavours of Strawberry and Mint, along with all the other usual suspects. Weve achieved this via new world techniques being a Rotary Evaporator, otherwise known as cold vacuum distillation. Boiled at 30 degrees my friends! Keeping all that fresh flavour in... You can look forward to being reminded of the strawberry Lip Smacker and mint flavoured Extra bubblegum of your first kiss, minus the sweaty palms and braces.

Created to capture as purely as possible the essence of the Australian summer garden, this is the original Garden Grown Gin by Grown Spirits. The French perfumers' time-honoured technique of enfleurage is used to extract the delicate scent and flavour from the hero botanical Murraya. It, along with Chamomile, Sage, Rose, Angelica, Orris Root and of course Juniper bring this floral gin alive. On the nose, there are hints of jasmine, sweet honeysuckle and orange blossom.

Each 500ml spirit lid is manually dipped in wax with a silver foil swing tag, presented in a hand wax dripped, thick cardboard cylinder box. Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Plus, with all that spice it also makes a spot-on Red Snapper, so next time you feel like a better Bloody Mary try one with Four Pillars Modern Australian Gin instead.

A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.
