The team behind Morris Distillery has over six generations of craftsmanship in winemaking, blending and aging passed down through bloodline. This has allowed them to really master the production of the truly remarkable flavour in their Australian Single Malt Whisky. Maturated in a combination of French and American oak ex-Australian red wine casks and finished in barrels that have held our Morris of Rutherglen 10yr-Aged Amber Apera (Sherry). The Aged Amber is a full flor fino, produced predominantly from the Palomino grape. It exhibits a drier style, showing elegance and complexity from years of long-term aging in cask, making it a beautiful compliment to the whisky. The result is a well integrated and very approachable Australian single malt which the broad whisky consumer can embrace. A nose of Spun toffee, baked fruit flan with peach compote and fresh sherry cask notes. A well-structured whisky with subtle spice, toasted nut and clean oak characters, candied lemon with gentle sage and marjoram herbal notes.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Created to capture as purely as possible the essence of the Australian summer garden, this is the original Garden Grown Gin by Grown Spirits. The French perfumers' time-honoured technique of enfleurage is used to extract the delicate scent and flavour from the hero botanical Murraya. It, along with Chamomile, Sage, Rose, Angelica, Orris Root and of course Juniper bring this floral gin alive. On the nose, there are hints of jasmine, sweet honeysuckle and orange blossom.

A delicate, contemporary dry gin with a burst of citrus from blood orange, ruby red grapefruit and Australian native lemon myrtle leaf, balancing spice of wormwood, pink peppercorns and ginger for warmth. Herbal juniper notes lengthened by green tea, with smooth, sweet vanilla adding mouth-feel and lavender bouquet to finish. Prohibition Original is the perfect martini gin, with a soft, sophisticated elegance in flavour and depth, with a perfect balance of citrus and sweetness, spice and floral finish.

Awarded Ireland's best gin, Dingle Original Gin contains botanicals from a pristine Kerry landscape, including rowan berry, fuschia, bog myrtle, hawthorn and heather. Macerated for 24hrs, the spirit is distilled in a hand beaten copper still with resulting vapors passing through a flavour basket. The distillate is then cut with pure water drawn from a well 240ft below the distillery. Each bottle is hand filled and numbered by batch. Best served over ice with tonic and a wedge of fresh orange.
