No. 209 opens up with a beautiful aromatic nose of predominately citrus and floral notes with a hint of spiciness. First across the palate are the citrus high notes, with lemon predominate followed by a hint of orange. As the spirit warms in the mouth, delicate floral notes are liberated from the bergamot and coriander. Mid-Palate, there is a pepper-like warmth from the emerging cardamom and juniper with a wonderful counterpoint from the mint-like componets of the cardamom. As the gin passes the palate, the cassia and the other warm spice notes become prominent. The cassia in particular will linger in the aftertaste, encouraging another sip.

Distiller’s favourite, packs a punch at 58% ABV but has a strong flavour profile to match. Big juniper and spice at the front of the palate, progressing through cardamon, cinnamon and finishing with lemon myrtle and citrus notes. Very versatile, great with soda or tonic makes a banging martini or negroni.

Contemporary style Gin that is sweet on the palate. The Quandong (wild peach) dominates the palate early then the Kakadu Plum provides a tart, citrus finish. Best enjoyed with soda or a light style tonic and garnished with a slice of Grapefruit.
