A collaborative expression between wine region & gin distillery like no other. Our Dry Gin has been barrel-aged for 6 months with locally sourced French Margaret River Cabernet Sauvignon barrels. The palate is bold with dark fruits such as mulberry and blackberry, as well as a tannin and complex integration of pepper berry and woody flavours.

Our Overproof Gin, true to the mining state of Western Australia, is crafted to pack a punch at the end any hard day of work. Loaded with spiced flavour featuring, cardamon, coriander seeds, cubeb peppers, orange rind, and black pepper resulting in an overproof gin of real finesse and power yet smooth on the palate.

A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Inspired by the flavours of South East Asia, fresh makrut (keffir) lime leaves, ginger, lemongrass and kumquats alongside more traditional ingredients such as juniper,coriander, angelica and orris are used in the distilling process. Jungle Gin's bright aromatics work wonderfully with a dry tonic garnished with a lime leaf, yet equally well in any citrus forward cocktail.

To create this Raspberry gin, whole Raspberries were added to the finished Gin to macerate for 7 days providing a vibrant pink hue and luscious Raspberry character. Alongside more traditional botanicals, strawberry gum and earl grey tea were distilled to complement the raspberries. Boatrocker Raspberry Gin provides a modern twist to a classic G&T (feel free to garnish with fresh or freeze dried raspberries), alternatively, make a 'Pinky' Tom Collins by using Boatrocker Miss Pinky Raspberry Berliner Weisse instead of Soda water!

A delicate, contemporary dry gin with a burst of citrus from blood orange, ruby red grapefruit and Australian native lemon myrtle leaf, balancing spice of wormwood, pink peppercorns and ginger for warmth. Herbal juniper notes lengthened by green tea, with smooth, sweet vanilla adding mouth-feel and lavender bouquet to finish. Prohibition Original is the perfect martini gin, with a soft, sophisticated elegance in flavour and depth, with a perfect balance of citrus and sweetness, spice and floral finish.

The flavours in Adelaide Gin are floral in nature, built up using a traditional range of spices including cardamom, juniper, orris, coriander, and nutmeg, as well as the beautiful richness of Kangaroo Island lavender.Adelaide Gin is a sophisticated dry gin, perfect when served neat. Those who prefer to mix their gin should serve it with something that compliments the floral nature, such as a light tonic with a sliver of orange. As an alternative, Elderflower makes a lovely pairing. It also partners well with other flavoursto create magical gin-based cocktails.

Breakwater is the signature gin, inspired by classic London Dry Gin and our love of the coast.
