Breakwater is the signature gin, inspired by classic London Dry Gin and our love of the coast. Enhanced traditional bright pine and herbal notes of juniper with crisp flavours of whole grapefruit while angelica and dandelion roots impart a lingering salty savouriness. The unique blend evokes the tang of sea spray at the breakwater, or catching the first ocean wave of summer - intense, exhilarating and calling you right back in again. Hand-crafted using a combination of locally sourced Riverina citrus, and traditional botanicals, our Dry Gin Murrumbidgee is inspired by the Riverina, New South Wales, the food bowl of Australia. Cedar Fox's Barrel Aged gin is un-filtered and is matured in whisky barrels for a period of up to four months, imparting wood and subtle whisky notes while still maintaining upfront gin qualities. Starward NOVA is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.
