Hand-crafted using small parcels of old vine fruit, The Barking Dog Grenache Shiraz Mataro is an exceptional example of three of the Barossa Valleys finest varieties. The Barossa Ink Shiraz is intense purple red in colour with great density. The bouquet is rich with plum, raspberries and dark cherries, with underlying hints of dark chocolate, coffee bean, and spice. This super rich, full bodied wine has a sensual palate offering plenty of texture, fine velvet tannins and soft, round dark fruit flavours.

The Bishop has the fingerprints of Ben and his father Colin all over it. Ripe, rich, concentrated and supremely complex, the Bishop is the wine for all those full-bodied red fans out there. Ripe liqueur cherries on the nose compete for attention with vanilla, mocha and coffee aromas while the palate is full of sweet berry fruit flavour and a soft, luscious finish that seems to persist for an age. While exuberant and lively when young, the Bishop is known to handle medium term cellaring extremely well and reward any with the patience.

AROMAS Lifted dark fruit characters of plum and boysenberry, complimented by notes of red cherries with hints of black liquorice and cedar oak. Red wine artisan, Marco Cirillo, has produced a single vineyard Shiraz with as minimal intervention as possible. Using 90% whole berry and 10% whole bunch as well as natural yeast fermentation without fining or filtering, this Shiraz screams of its terroir. Expressive fruit up front of plums and red berries with small waft of leafy characters. The palate dances across the tongue without hindrance from over use of oak and is a supreme wine for the price.
