Defaix's Chablis comes from a range of parcels with different vine age and aspects. Aged on fine lees in glass-lined tanks, this is a textural, and uplifting Chablis rich in oyster shell and citrus notes and driving freshness on the finish.

The palate exudes fleshy primary fruits, layered with nutmeal, lemon butter and brioche. A chalky, mineral texture and fresh citrus acidity continues the bounce.

Capel Vale is family-owned and one of the pioneers of the West Australian wine industry, first planting vines in 1974. And the duck? A symbol of the native mountain ducks that inhabit the nearby Capel River. In the glass: Pale with green freshness.On the nose: Rich and nutty aromas with stonefruit, citrus and struck match. Houghton made wine for 101 years before Jack Mann created the iconic, and incredibly influential, White Burgundy in 1937. In 2023, more than 80 years on, Houghton honoured this history with the release of this exquisite old vine chenin blanc from Margaret River. With a foot in the past and an eye on the future, EV/37 represents chenin blanc at its best—vibrant, delicate, layered, textural.

The 2021 vintage was marked by low yields, ensuring that the crop was harvested at optimal ripeness and in ideal condition. Although bird pressure was high and unpredictable rainfall during the growing season and throughout harvest presented challenges, the artisanal nature of our wines prevailed. Wines of excellent balance and fruit purity, a vintage similar to 2003 in style. Best varieties Cabernet Sauvignon, Malbec, Sauvignon Blanc and Semillon. A clean introduction of citrus blossom and white flowers wraps the palate, followed by vibrant notes of mandarins and pink grapefruits. The transitions to a textural mid-palate with flavors of pink lady apples and Bosc pear, culminating in a crisp finish marked by a clean minerality. The creamy nettle lingers, showcasing the wine's multilayered complexity and the balance of its phenolics.
