Sacred Spirits is a family run distillery based in Highgate, London. Founded in 2008 by Ian Hart and Hilary Whitney, the brand has established a strong reputation in the UK, Europe, and the USA. Just landing in Australia for the first time, Sacred spirits are made using organically sourced botanicals, vacuum distilled by hand at the Highgate Distillery, just a few yards from the famous cemetery. Sacred founder and distiller Ian Hart grew up in the same house and London suburb of Highgate where Sacred Spirits was born. Ian was always fascinated with chemistry, and first turned to exploring his love of French wine. Produced in the distinctive terroir of Hampshire, Southern England, where chalk is the dominant element of the soil, this English Sparkling Wine was made using the thoroughly classic and traditional method, building on the internationally renowned grape varieties that are Chardonnay, Pinot Noir and Meunier. The blend incorporates a majority of Chardonnay, contributing to its finesse and elegance, as well as a large proportion of Pinot Noir, which produces fruit and structure, and just a touch of Pinot Meunier. Pommery style, expressed through English terroir.At first glance, it is a lovely and delicate pale straw yellow in color. To the nose, the key word that comes directly to mind is freshness, but also finesse thanks to the yellow citrus aromas that emerge. The end note is straight and free of harshness, with a well-controlled dosage that leaves no impression of sweetness.

It's matured in a combination of refill and toasted American oak casks, with a slightly higher proportion of toasted casks.
