Aged in ex-bourbon casks before being finished in sherry casks. Double Wood is an excellent example of what the Balvenie distillery can craft, even at 12 years.

Glengoyne can claim to have the slowest distillation process in Scotland - a process that makes this distillery very unique, much like their positioning on the Highland/Lowland border. The 15 Year Old Single Malt is supremely complex, sweet and well rounded. There is a wonderful spicy oak finish that compliments the luscious palate that is enhanced by the process of air drying the barley, never peat dried. The process of Scotland's slowest distillation can be tasted in every dram of this Cask Strength Single Malt by Glengoyne. Hand-crafted from inception to glass, this single malt also shows the dramatic effect of warm air drying of the barley rather that using peat smoke. Ledaig is a wonderfully distinguished single malt handcrafted on the Isle of Mull by the Tobermory Distillery. The only distillery on the island, Tobermory produces its only peated malt in this Ledaig 10 Year Old Single Malt. Sitting in the ancient vaults for 10 years and the use of superior oak wood casks, aromatic lochan water and the exclusively peat dried malted barley all go to producing a whisky of purity, power and vibrancy. Talisker is one of Scotland's remotest distilleries which produces a dram with trademark smoothness. Their 10 year old has a powerful peat and sea-salt nose; smoky sweetness with malt flavours and developing warmth with a huge, peppery finish. One of the six classic malts of Scotland, this Whisky is best enjoyed neat or with a slight dash of water.

This peaty Single Malt dates back to 1816, when John Johnston and Archibald Campbell each constructed a distillery on what today is the Lagavulin site. After Johnston died, Campbell consolidated the two, before selling it to malt merchant Alexander Graham. Today it continues to uphold the traditions of its past, using meticulous preparation to create powerful whisky. Their signature 16 year old malt has a strong peat, smoke and seaweed nose that is followed by a nutty complexity and light fruitiness. In the mouth characters of Charcoal, dry woodiness and iodine followed by chilli chocolate and a hint of toffee.

Nestled away in the far north of Scotland's Highland region is the distillery of Clynelish. Situated at Brora on the stormy North East coast, this 14 Year Old single malt has been matured in specially selected oak casks and then bottled at the full 46%. Displaying a waxy nose with a hint of sugar and florals, the whisky arrives on the palate with power and flavours of signature spice and maritime saltiness.
