Each Bottle is hand sprayed black and the label hand written and signed by Ryan Hartshorn (Head distiller) The spirit is made by fermenting the lactose sugar within the whey which is the waste from our sheep cheesery which is on the same farm where we milk our animals. Very Small 80-100 bottle batches. The spirit is unfiltered which is rare for a vodka. This means you will get a lot of character remaining from the whey which is a sweet nose and creamy mouth feel. True to its name our mouth-watering Zesty Limoncello combines a traditional family recipe passed down through generations from the Amalfi coast with some of our favourite foraged Australian botanicals to leave your mouth perfumed with a zesty sherbet finish. Only using carefully selected thick perfumed lemons grown at an orchard on the central coast, north of Sydney, we hand peel them, being most particular to avoid the bitter pith. Infusion of the peel into the smooth grain spirit cannot be rushed. After a month the citrus oils combine with the native botanical distillates of Lemon Aspen and Lemon Myrtle to give birth to a flavour-blend of bitter-sweet grapefruit and lime with a hint of honey and eucalyptus.

Thus was born the 3- Star Cognac, better known today as Hennessy VS which is a complex blend of more than forty eaux-de-vie (brandy parcels) from the four premier growing areas of the Cognac region.

Veuve Capet is the first Vodka exclusively made from Chardonnay grapes (hand-harvested in the famous Côte des Blancs, in French Champagne vineyards). After a fivefold distillation and charcoal filtration, this vodka was assembled with perfectly pure water. Veuve Capet has a unique character, combining roundness and fruitness. Tasting notes : Eye : Perfectly crystal clear. Nose : Rich and elegant bouquet. Fresh, dominated by citrus notes, including grapefruit zest, then evolving to exotic notes of mango and guava. Mouth : Very rich and supple in the mouth. Complex aromas with citrus, the finish is particularly long, dominated by Williams pear notes.
