Created to capture as purely as possible the essence of the Australian summer garden, this is the original Garden Grown Gin by Grown Spirits. The French perfumers' time-honoured technique of enfleurage is used to extract the delicate scent and flavour from the hero botanical Murraya. It, along with Chamomile, Sage, Rose, Angelica, Orris Root and of course Juniper bring this floral gin alive. On the nose, there are hints of jasmine, sweet honeysuckle and orange blossom.

This Western-style gin from Portland, Oregan, so impressed Wine Enthusiast magazine, they recently voted it 'Top Gin'. With delicious lavender and citrus notes in a creamy-rye spirit base, this Aviation Gin is equally enjoyable on its own or in a lip-smacking cocktail.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Four Pillars Spiced Negroni gin cuts through the Campari and vermouth in your Negroni. It uses the base Four Pillars botanicals along with extra Tasmanian pepper berry leaf and cinnamon. There is also some West African spice called Grains of Paradise, with clove and Sichuan characters. Cameron uses organic blood oranges in the botanical basket, as well as ginger.

Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Its even more remarkable, when mixed with tonic and it turns from its lustrous blue to a remarkable blush pink. A premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.

Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.
