Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Its even more remarkable, when mixed with tonic and it turns from its lustrous blue to a remarkable blush pink. A premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Our old tom style of gin is single shot distilled by hand using a traditional copper pot still. with a selection of queenslands finest botanicals weve created an old tom gin that marries the spice and earthen notes of juniper with sweetness from frankincence and myrrh, and refreshing hits of citrus from native finger limes.

A limited release seasonal Gin, inspired by the Marrickville team’s favourite cocktail. This is a juniper-forward Gin (not a Gin liqueur), with tropical botanicals including coconut, pineapple, pandan leaf, lime, nutmeg and allspice. On the nose, there’s a nice kick of juniper with an underlying tone of caramelized pineapple and vanilla. Toasted coconut and hints of sea-spray and citrus add freshness. When sipped, the oily consistency coats the palate with silky coconut flavours contrasted by lime peel bitterness and fresh grassy notes. Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.
