A beautiful blend, the pinot component adds lovely strawberry flavours to the creamy nutty characters of the chardonnay which are the hallmark of the house of Chandon. Rich salmon pink in colour, the nose delivers enticing aromas of freshly baked pastry and nougat along with spice notes and hints of cherry and ripe strawberry. The palate is dense and multi-layered with mouth-filling red berry flavours complemented by toasty characters. A beautifully structured mid-palate is supported by savoury spice and fine creamy notes. The inclusion of red pinot noir base wine in the blend provides great complexity, persistence and a sublime long, dry finish.

The bouquet is an enticing mix of white field flowers, grapefruit, pear essence and brioche. Enriched with layers of nougat and nut-meal, the palate's fine, creamy texture is supported by toasted vanillin oak. A bright citrus and chalky lactic acidity adds restraint and length to finish the wine. Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. This white blend's aroma includes some beeswax complexity and preserved lemon peel lift. Red apple skin and creamy white peach. The palate has crunchy red apple freshness and delicious passionfruit tropical fruits. The small amount of skin contact gives a textural wine and encouraged structure through tannins. The length is dominated by the Semillon and driven by a bright acid tang that would stand up to a variety of food pairings.
