The 2006 vintage has evolved to express the depth of flavour, minerality, structural elegance and vibrancy. Lifted characters of sea spray, exotic spice, Shiitake mushroom and brioche. xquisite structural elegance and great tension within the balance of dosage, acidity and fine tannin. The wine finishes with the vibrancy of lingering natural acidity. Pair with fresh seafood, either natural or with a light Asian influence.

Lark Strength Whisky

Lark is Tasmanian whisky, proudly unique in character and style. Entirely made by hand with no more than 100 litres at a time, Lark's 58% Cask Strength expression is widely regarded as 'one of the world's best cask strength whiskies', winning numerous international medals and trophies. Surprisingly easy to drink at this strength, the whisky driven by a more rich malty alcohol, perfectly dominating the floral and crýme caramel notes to reveal layers of Tasmanian malt bursting across the palate, finishing with lengthy maple syrup sweet notes of highland peat and oily spice.

Billecart Salmon Brut Reserve Non-Vintage

NV Billecart Salmon Brut Reserve, A satiny white mousse sits well over a straw pale gold tinged base that’s finely threaded by a steady stream of delicate bubbles. Strong yeasty baked bread characters intermingle with oily toast, cashew, citrusy honey and brioche notes. Rich yet tense and tightly knit on the finish the palate features mouthwatering flavours of baked bread, citrus, oily toast like characters and yeast lees with some roasted almonds on the dry crisp finish. Long precise aftertaste that has a lingering subtle dried nut element to it. A very dry and focused Champagne that requires some patience.

Iron House Distillery Bourbon Single Malt Whisky

Aged 4yrs in American Oak ex Makers Mark barrels, Iron House Single Malt Bourbon Cask brings rum and raisin aromas with a subtle vanilla and a spiced herb oak undertone. A wash of buttery warm caramels heat, hazelnut and oak finish with sweet dried fruits to engulf the palate, with a lengthy finish of bourbon heat and spiced oils.

Aged 4yrs in Sherry Barrels sourced from Frances wine region, Iron House 100% Tasmanian Single Malt Sherry Cask is a delicate and subtle whisky, with a slight aroma of sweetened candied nectar and a dried fruit spice on the nose, with an undertone of butter. This is followed by an extremely smooth palate with sweeten white wines, raisins, pink candy and citrus warmth with just a touch of oak.
