An opulent Pinot Noir made from select parcels of fruit showcasing its Marlborough origin gloriously. An aromatic wine with black fruit and spice on the nose. The palate is rich, also with black fruit, but a hint of red fruit to add unexpected freshness.Textural and deep, this will age for up to ten years with grace (although its ready to enjoy now). The fruit is 100% destemmed then aged in 30% new oak. Novum use small parcels of fruit from specially selected sites on established Marlborough vineyards to craft the best wines and expressions of terroir possible. Their first vintage arrived in 2016. Novums primary focus is on Syrah, Pinot Noir and Chardonnay.

Fruit for this wine was carefully Hand picked & destemmed into small open top fermenters, retaining a high proportion of whole berries. One small component contained 100% whole bunches and underwent a period of carbonic maceration prior to being foot stomped - the final blend contains 15% Whole Bunch. Individual fermenters underwent a short pre fermentation maceration before fermenting naturally and being left on skins for up to 32 days before pressing. After a brief period of settling the wine was racked to 225L French oak barriques (30% new) where it underwent natural MLF and matured for 10 months before being prepared for bottling on the 25th of March 2022.

The palate is rich and mouth filling, with up front fruit sweetness balanced by a fine juicy acidity. Notes of dark berry fruits, exotic spice and toast fill the mid palate framed by fine chalky tannins before finishing with lingering suggestions of earth and mushrooms. He lets each individual parcel of fruit shine in its own right, and also believes that by combining a number of unique parcels in a larger blend you can produce a wine that is multi-faceted, interesting and evolves in the glass, creating a true sensory experience. This has been a leading light for Central Otago for Pinot Noir, displaying perfumed ripeness with piercing clarity; dark fruits of the forest dominate the aroma, underpinned by floral and spice notes. Red fruit aromatics are underpinned by cherry and Christmas cake spice while the palate is well textured.

The fragrant nose offers a broad array of autumnal notes --- woodsy spice, leaf litter and earth, alongside bright wild berries and a subtle cured meatiness. The core of the wine carries a juicy and sappy mid-weight texture that is firmly supported with a dusting of finely integrated tannin. Black cherry and raspberry flavours lead into a long and intense finish.

Dense, intense and quite powerful pinot noir, with a core of sweet fruit balanced by moderately rustic tannins to give a drying and lengthy finish. Dark fruits with savoury, dried herb characters adding extra complexity.
