The palate is rich, also with black fruit, but a hint of red fruit to add unexpected freshness.Textural and deep, this will age for up to ten years with grace (although its ready to enjoy now). The fruit is 100% destemmed then aged in 30% new oak. Novum use small parcels of fruit from specially selected sites on established Marlborough vineyards to craft the best wines and expressions of terroir possible. Their first vintage arrived in 2016. Novums primary focus is on Syrah, Pinot Noir and Chardonnay.

Dalrymple Vineyards was established in 1987. Situated in the heart of the Pipers River region of north-eastern Tasmania, almost equidistant from Launceston, Scottsdale and George Town. Dalrymples own vines are planted on sloping hills that overlook Bass Strait, and they also have access to vineyards in other parts of the State. This Single Site Pinot Noir comes from the Coal River Valley, just outside Hobart.

Fruit for this wine was carefully Hand picked & destemmed into small open top fermenters, retaining a high proportion of whole berries. One small component contained 100% whole bunches and underwent a period of carbonic maceration prior to being foot stomped - the final blend contains 15% Whole Bunch. Individual fermenters underwent a short pre fermentation maceration before fermenting naturally and being left on skins for up to 32 days before pressing. After a brief period of settling the wine was racked to 225L French oak barriques (30% new) where it underwent natural MLF and matured for 10 months before being prepared for bottling on the 25th of March 2022.

Dense, intense and quite powerful pinot noir, with a core of sweet fruit balanced by moderately rustic tannins to give a drying and lengthy finish. Dark fruits with savoury, dried herb characters adding extra complexity. The grapes for the wines that carry the Mt Difficulty Bannockburn label are subject to two strict criteria: they are managed under the umbrella of the Mt Difficulty viticultural team and must be sourced from vineyards situated on the South side of the Kawarau River at Bannockburn. This Pinot noir displays lovely elegance and flow with striking precision and clarity. On the palate it kicks off with a supple dark berry entry, moving into a beautifully textured plush mid palate, after which fine elegant textural tannins frame fruit and acidity on a lengthy finish.
