Our philosophy has always been to give our wines time to develop in the bottle before release, a rarity in today’s market. Enjoying wines when they are ready to drink, rather than straight after bottling, when the wine has had time to develop and balance up in the bottle with no screaming parts. This cane cut is produced from Sauvignon Blanc vines planted in 1987. Hand harvested on the 17th of April at 23 baume. Fruit cold crushed to press and cold settled before a 12 o C ferment in barrel. Aged on light lees for four months before bottling.

The current release of the Fire Gully Sauvignon Blanc Semillon is a superb exampe of the blend. This award-winning Semillon Sauvignon from Margaret River put simply is everything we love about this classic blend. Clean and fresh showing ripe fruit characters of passionfruit and gooseberry. The palate is light and textured with ripe passionfruit and lemon thyme. Margaret River winemaker and vigneron Kevin McKay spent the first 15 years of his career developing his family’s Abbey Vale property. Then, under the mentorship of winemaker Dorham Mann, Kevin has developed iconic wines at Forester Estate. Priding himself on his attention to detail, his wines show trademark complexity and depth.

This wine is a blend of 79% Sauvignon Blanc, 16% Semillon and 5% Verdelho, and is made from certified biodynamic fruit. Harvested on the fruit and flower days of the biodynamic calendar and fermented without oak, additions of yeast or acid. Some skin contact time before fermentation.
