The arrival of the late great Daniel Thibault transformed Piper-Heidsieck beyond recognition. The style is now fuller and rounder with elegance and charm. The cepage is an equal blend of all 3 varieties and shows good balance and length. The wine is a fresh aperitif style which is much finer than is often given credit for. Marilyn Monroe famously declared that she went to bed every night with Chanel No5 behind her ears and woke up every morning with a glass of Piper-Heidsieck.

The vintage Rosé Champagne, first created in 1988, is named in honour of co-founder Elisabeth Salmon. Very pale, crystal-bright in colour.Intense and complex on the nose with a wide range of aromas including citrus and white fruits, honeysuckle flowers and iodine notes which give off an impression of freshness.This airy and delicate wine of a surprising length is characterised by high purity of taste, a long and non-saturating finish.Laurent-Perrier Ultra Brut is a wine with no added sugar. Only fruit from 7 Grand Cru vineyards is used to craft a blend of equal parts Pinot Noir and Chardonnay, which spends over 4 years ageing on lees plus 6 months post disgorgement. Further gentle ageing takes place until deemed ready for release by the Cellar Master. It displays mature citrus characters, fresh white and red fruits and gentle spice, all linked by a common thread of minerality producing complexity, elegance and length.

The colour of this vintage in the glass is pale yellow reflecting the wines delicacy. Endless strings of fine bubbles enliven the wine. The nose is captivating; it reveals a fine and pure aromatic richness as well as delicacy and freshness. The Chardonnay grape is strongly present, expressing distinction and complexity. Notes of citrus fruit are combined with slightly spicy end notes. The wine flows without sharpness or excessive roundness. The finesse and delicacy produce a pure and wonderful taste.
