Dom Pérignon is the most famous Champagne in the world, and for good reason. The bouquet sparkles with delicate fresh violets in a setting of white peaches. The soft delicate flavours continue while the senses are tickled by the most delicate of fine bubbles. Though this is such a fine delicate wine, the complexity is astounding, along with its length. Founded in 1818 by husband and wife Nicolas François Billecart and Elisabeth Salmon, the Billecart-Salmon House is rich with history. For nearly two hundred years, the Billecart family has been handing down the secrets to making exceptional champagne from generation to generation. The Champagne House is special for many reasons, but one notable reason is that it is one of very few to remain Family owned. The Billecart-Salmon House covers around 50 hectares, and gets its grapes from a total of 170 hectares of land. Frequently cited for the quality of its vintages, the House pays particular attention to selecting the best grapes.

Elegant, with colour changing naturally from a pretty raspberry hue to salmon-pink. A precise nose of extraordinary freshness and a wide range of red fruits: raspberry, redcurrant, strawberry, black cherry. A fresh and sharp attack for this supple and rounded wine. On the palate, it offers the sensation of plunging into a basket of freshly picked red berries. Pinot Noir from 10 different crus located mainly in the South and North areas of the Montagne de Reims including the famous Côte de Bouzy. Notably from the finest crus of Ambonnay, Bouzy, Louvois and Tours-sur-Marne. The grapes from carefully selected plots are sorted and destemmed before vatting. The maceration lasting from 48h to 72h depending on the harvest helps the extraction of the colour and the development of the full aromatic richness of the Pinot Noir, with 5 years minimum ageing.

The origin of the House dates back to 1812, created by André Michel Pierlot, it will take the name of Veuve Laurent-Perrier when Mathilde Emilie Perrier, widow of Eugène Laurent decides to combine the two family names while she ensures the development. Eugénie Hortense Laurent, his daughter, inherited the House in 1925 and sold it to Marie-Louise de Nonancourt, née Lanson, in 1939. Laurent Perrier La Cuvée comes from the purest grape juice and it alone allows Laurent-Perrier to craft La Cuvée, a champagne of great finesse and a beautiful freshness obtained after a long ageing process in our cellars. Laurent-Perrier’s style and personality are defined by its very high proportion of Chardonnay. Purity, freshness and elegance – essential characteristics, expressed in this champagne – are a good introduction to the spirit of the House.
