The Aude Valley, stretching between Carcassonne and the Pyrenees in extreme south of France is similar in climate and Limestone soil to the Loire Valley. The high altitude and cooling evening breezes creates wines with varietal character, acidity and freshness. This wine by Le Chat is very pale pink in colour, sitting well within the classic Provence pale and dry spectrum. The nose is aromatic and sweetly perfumed with aromas of strawberries and rose petals. The palate is a revelation compared to previous vintages, elegant and effortless with light berry and candied fruit drop flavours lingering long on a soft, dry finish.

Le Chat Noir is a range of modern French wines created by Vincent Charleux. Inspired by the humble village bistro that is at the heart of French culture and cuisine, the Le Chat Noir wines are generous and approachable. The wines are sourced from the Aude Valley, located in the foothills of the Pyrenees south of the famed walled hillside town of Carcassonne. Rising to an altitude of 450 metres, the terraced, low yielding vineyards are cooled by refreshing winds and chilly nights, creating elegant and varietally expressive wines like this Pinot noir.

Yellow Tail Cabernet Sauvignon is a bright red colour with a fragrant nose of primary red fruits and blackcurrants. Aromas of crushed blackberries with sweet mocha also fill the nose. L’Epiphanie de Saint-Estèphe comes from a very fine estate in Bordeaux’s legendary St-Estèphe appellation in the northernmost part of the Médoc – one of only two Second Growths. (There are actually no First Growths in St-Estèphe, so this is pretty much top of the tree.) First Growth Château Lafite is just across a stream to the south, which gives you an idea of the hallowed terroir we’re talking about. We can’t reveal which estate this wine comes from, but we can tell you that two of its Grand Vins from the legendary 2009 & 2010 vintages were rated a perfect 100 points by the great Robert Parker – wines that sell for nearly $200 per bottle! It's compellingly aromatic – a seductive scent of violets and ripe red fruit. The luscious palate delivers concentrated cassis and plum, with touches of mineral and cherry on the long, sensuous, minerally, finish. It's a sublime example of the lavish St Estephes from this great estate, silky smooth, velvety, complex and long.
