This Shiraz is sourced from the McLaren Parish Vineyard in the classic Shiraz region of McLaren Vale, South Australia. The fruit used to produce Mitolo Savitar Shiraz was sourced from bountiful vineyards in southern McLaren Vale. The grapes underwent fermentation on their skins for a fortnight, which was followed by pressing. The resulting dry red wine displays a deep garnet red colour. The perfumed bouquet exudes attractive aromas of blackberry bramble, tar and fresh mint, coupled with floral hints and powerful vanillin oak characters. These fragrances effortlessly make way for a lush and intense palate, brimming with blackcurrant, plum and liquorice flavours. Integrated with silky and juicy tannins, the drink culminates in a fine and grainy finish. Cellar this wine for 8 to 12 years, for the flavours to evolve. Deep, dark red in colour. The nose is pure and unobstructed by newoak, lifted with dark fruit flavours of blackberry, chocmint, and anise. Dustings of white pepper spice, vanilla, and black olive tapenade provide an intriguing savoury counterpoint to the more primary fruit characters. On the palate is a concentrated, uscious rolling texture packed with fresh blackberry, dark chocolate and liquorice flavours. The wine is juicy and plush with silky tannins that linger, providing a drying, savoury finish.

Corrina Wright is now the winemaking brain behind this progressive winery and her Shiraz is a modern masterstroke. Smoke and bacon on the nose with sweet and savoury tones. Soft fruit flavours luscious mouth feel and great length to this wine. Delicious.
