'Black Label' Cabernet Sauvignon, which was first vintaged in 1954, has evolved markedly over the decades. It is arguably Australia's most recognised Cabernet Sauvignon, and has more than any other, helped define Coonawarra. The wine is matured in new and seasoned French oak for 12 to 18 months. A classic Coonawarra Cabernet with pristine dark berry/ cassis aromas, fine grained tannins and underlying savoury nuances, it develops into a rich, chocolaty wine with age. In a super vintage, this wine can look astonishingly like a 2nd or 3rd growth Bordeaux with its pure cassis aromas and cedary complexity. Very pale salmon, some light red hues. Red fruits, raspberry, cranberry, a touch of liquorice, some light spice and earth. Pinot Noir is apparent on the front palate, with berries, fluffy talc and crystalline texture. The Grenache brings weight through the middle, a riot of red fruits and tarry spice. Mourvèdre fills the rear, with lovely fine extract framing the palate and adding length. A harmonious and very fine Minnow Rosé by Shadowfax: complex, dry and delicious.

One could be mistaken for thinking Grove Estate was in the heart of Coonawarra with it's vivid red soil. It's in fact nestled in the emerging region of Hilltops in NSW and with the guidance of Canberra guru, Tim Kirk, this great Cabernet shows flavours and aromas of liquorice, blackberry and rich cassis.

Since the first release in 2002, Fraser Gallop Estate have gone from strength to strength, picking up a Jimmy Watson Medal along the way. The Cabernet Merlot is a lovely example of the blend which is so at home in Margaret River. Leafy mulberry on the nose with cassis in the background, and a soft , flavoursome palate. Delicious!

A relatively new addition to the Taylors range, the Jaraman Cabernet Sauvignon is part of a range that includes some of the best in the Taylors lineup of fine wines. Elegant with intense fruit flavours of cherry and cassis along with hints of mint, cedar and spice.

Now sourcing fruit from premium regions across Australia, this Cabernet blend shows varietal mint on the nose with floral notes in the background. The palate has good weight and texture, the flavours of blackcurrant and herb framed by firm tannins.

Grant Burge, while normally known for full bodied reds, produce an exceptional sparkling here with an attractive nose of strawberry, stone fruit and biscuity notes leads to a richly flavoured, generous palate with a creamy mouth feel and beautifully crisp finish.

Battle of Bosworth Cabernet Sauvignon is a standout wine of flavoursome red fruits and currants; firmly structured, very rich and grippy. Deserves to be taken very seriously. Proof of such comes with the Trophy for Best Cabernet Sauvignon at the 2011 McLaren Vale Wine Show.

Packed full of mint, blackcurrants, spice and cedary oak, this wine is indicative of how a great the 2004 vintage was. Drinking beautifully now.
