KI NO BI (The Beauty of the Seasons) is inspired by tradition and distilled, blended and bottled in Kyoto. We collaborate with the craftsmen and artisans of Kyoto who refine their skills in the legacy of the generations before them, working continuously in the cultural heart of Japan. Japans first dedicated gin distillery was founded with the sole intention of creating the finest gin possible: made from rice spirit and, wherever possible, using locally sourced botanicals, including yuzu, gyokuro tea and sansho pepper. The Founders are inspired by Kyoto culture, art, craftmanship and agriculture.

Symphony No. 1 is the first blended malt from the House of Lark, representing a composition of exceptional Tasmanian single malt whiskies. Australian Pale Malt, distilled in our towering twin copper pots and aged in first-fill ex-Bourbon American oak. Matured to an assertive, balanced complexity over four Riverland summers. Due to its Southern hemisphere birth, swirl anti-clockwise in the glass to waken its slumber and unlock sensory treasures including honey, tangerine, cardamom and brioche.

Creamy mouthfeel packed full of rich dark fruits and sweet malt notes, which give way to sweet vanilla and cocoa interspersed with cinnamon spice. The whisky is matured in a combination of French and American oak ex-wine barrels plus finished in rare Morris Muscat barrels, previously used to create multi-award winning Muscat. COLOUR: Deep rich copper with reddish hues. NOSE: Rich with dates, figs and sweetness of dark molasses. PALATE: Well balanced and complex. Dried fig, sweet malt, vanilla and spices with creamy mouth feel. FINISH: Superb oak influence, lovely finish with satisfying after taste that lingers on the palate.

Our interpretation of a traditional British Navy Strength gin, KI NO BI SEI is made using the same production method with 11 botanicals distilled in 6 distinct flavour categories: the final blend has been recalibrated to bring out the botanicals at maximum intensity. High proof allows the distinct taste of KI NO BIs flavour profile to prevail. Its punchy at first on the palate, still has the cleanness and harmony. All essences of flavours are enhanced in good balance.
