Crafted by Daniel Chaffey Hartwig and Theo Engela, this wine was fermented in a six tonne open fermenter with seven days skin contact and twice daily pump-overs. Matured in shaved, seasoned French oak hogsheads for 11 months. In the glass: Deep red.On the nose: Blackberry, plum, pepper and charcuterie lift.On the palate: Bold with a ripe mix of red and black fruit flavour, complex peppery spice, velvety texture and fine tannin drive.

Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. Houghton Gladstones Cabernet Sauvignon is a wonderful example of well established wineries in the Western Australian wine scene with access to some amazing vineyards sites within the Margaret River.
