Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Jacaranda Ridge Coonawarra Cabernet Sauvignon, always exhibiting its Coonawarra provenance in the form of regional aromas and flavours, the intensity of the fruit produced by this location is exceptional for the region. Showcasing traditional regional characters of fine tannin and blackberry leaf, but also a darker, brooding quality unique to the vineyard from which the grapes were sourced. The balance and poise of this wine, along with the ample cassis and dark berry fruit flavour, will see this age well for decades to come.

This Merlot is medium to full bodied, displaying bold notes of black dark cherry and plum. The palate is lengthy and generous, followed by layers of vanilla bean and hints of mocha to finish.
