Majella The Malleea Cabernet Shiraz

The Malleea (an aboriginal word for 'green paddock') is a very fine exapmle of the classic Australian Cabernet/Shiraz blend. The 2008 is rich, dark magenta in colour, with ripe plums, spice and vanillin oak on the nose. The palate is like a complex fruit cake with layers of fresh berries, black olives and hints of chocolate.

Wynns Coonawarra Pedro Ximenez

Malt, toffee and caramel characters lead, with lovely clean spirit lifting up florals and hints of rancio and raisin. The palate is elegant, fresh and smooth with spicy complex toffee and fish oil. A round and rich mid palate is made tight with clear fine spirit, and creamy intense malt notes stretch for a long, clean finish. Pair with dry coconut ice cream, dark chocolate ganache and baked apple or bitey cheddar with figs, dates and prunes.

Geoff Merrill Parham Cabernet Sauvignon

Geoff Merrill Parham Cabernet Sauvignon is a deep red coloured wine with purple hints. It was aged in brand new American oak hogsheads for 27 months. Its complex and powerful bouquet exudes aromas of roast beetroot, dark chocolate, black olive, blueberry, licorice and mint. The focussed yet balanced oak creates depth as it opens up in the glass. The palate is fleshy, full of tannins, structured with tight acidity, and displays flavours of dark blue fruits, black cherry and olive. Enjoy it with runny double brie, white castello, or pork belly.

Hay Shed Hill Block 2 Cabernet Sauvignon

The Hay Shed Hill Block 2 Cabernet Sauvignon displays ripe berry aromas of brilliant intensity with underlying earthen nature along with typical characters well noted from Margaret River. There is a depth here that is hard to fault, in fact its downright breathtaking. The palate itself is quite substantial, even by Western Australian standards; displaying fully ripe, fleshy sweet fruit filling the mid palate with great palate extension driven by the ripe and mature tannin.

John George Cabernet Sauvignon

Margaret River is renowned for its premium Cabernet Sauvignons. This example emanates from this multi star rated Halliday Winery in the Yallingup Sub-Region. The palate is elegant with natural tannins, some floral qualities over plum and gravelly depth. A fine balanced wine, with a long palate that shows finesse. Enjoy. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Jacaranda Ridge Coonawarra Cabernet Sauvignon, always exhibiting its Coonawarra provenance in the form of regional aromas and flavours, the intensity of the fruit produced by this location is exceptional for the region. Showcasing traditional regional characters of fine tannin and blackberry leaf, but also a darker, brooding quality unique to the vineyard from which the grapes were sourced. The balance and poise of this wine, along with the ample cassis and dark berry fruit flavour, will see this age well for decades to come.
