Wynns is privileged to have some of Coonawarra’s best quality and oldest vineyards. Each year, the Winemakers select just one parcel of wine to bottle separately. In 2021, the Messenger vineyard, in the southern section of the terra rossa strip, showed to distinction. Planted in 1975, Messenger Cabernet is a dry grown vineyard on deeper soils.

Petaluma Merlot is medium body with a brick red colour, the superbly perfumed bouquet is a tangle of marzipan, spice, plum and confectionery and is the best nose of the early Petalumas. On the palate, flavours of cherry, plum and spice emerge, with very good depth and complexity.

The Malleea (an aboriginal word for 'green paddock') is a very fine exapmle of the classic Australian Cabernet/Shiraz blend. The 2008 is rich, dark magenta in colour, with ripe plums, spice and vanillin oak on the nose. The palate is like a complex fruit cake with layers of fresh berries, black olives and hints of chocolate.

Mildara first released wines in the late 1800's and was one of the earliest pioneers of the Coonawarra region in the 1950's. One of the most exciting wines in Dan's Cellar Release program, the 2004 Rothwell Cabernet is a wine of fierce structure, elegant balance and sheer drinkability. Classic blackcurrant, minty, toasty oak, medium bodied with a juicy pastille richness and firm tannins. Superb right now, it will evolve over many years to come.

Another string to their 'Single Vineyard' bow, Wynns reinvested in the Child's vineyard in 2009 - elevating the fruit there from its traditional supporting role in other premium releases (including John Riddoch and Black Label) to having a dedicated bottling of its own. Seductive from the first sniff. Certainly got me interested. Remarkably soft and supple Cabernet with almost cashmere fine tannins and an effortlessly smooth and long palate structure. Slightly chalky tannins add some balance and the follow though to the finish is extravagant and stylish.

The Hay Shed Hill Block 2 Cabernet Sauvignon displays ripe berry aromas of brilliant intensity with underlying earthen nature along with typical characters well noted from Margaret River. There is a depth here that is hard to fault, in fact its downright breathtaking. The palate itself is quite substantial, even by Western Australian standards; displaying fully ripe, fleshy sweet fruit filling the mid palate with great palate extension driven by the ripe and mature tannin.

Margaret River is renowned for its premium Cabernet Sauvignons. This example emanates from this multi star rated Halliday Winery in the Yallingup Sub-Region. The palate is elegant with natural tannins, some floral qualities over plum and gravelly depth. A fine balanced wine, with a long palate that shows finesse. Enjoy. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
