The wines of Fraser Gallop Estate are intensely flavoured, textured and complex. Only the finest quality French oak barrels are used for all Fraser Gallop Estate wines, with very specific Bordelais coopers used for the Cabernet Sauvignon and Semillon Sauvignon Blanc blends, and Burgundian coopers for the Chardonnay. Since 1992, Madfish have been producing an exciting range of contemporary, cool climate wines inspired by the wild, coastal and pure characterises of Australia's South West. The wines are made by the dedicated team led by chief winemaker Janice McDonald. The chardonnay displays bright notes of citrus blossom, peach fuzz and melon that merge beautifully with rich nuances of crème caramel, lemon curd and vanilla pod. A scattering of nutmeg and preserved pear furthers the texture and flavour on the palate.
