The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Evans & Tate Semillon Sauvignon Blanc, clear pale lemon-green in colour with aroma of fresh cut grass, passion fruit with a hint of elderflower on the nose. Dry medium body and intensity of crisp green apple and ripe stone fruits with hints of green pepper on the palate. Great acidity structure with a medium to long finish. True to the classic.
