Mildara first released wines in the late 1800's and was one of the earliest pioneers of the Coonawarra region in the 1950's. One of the most exciting wines in Dan's Cellar Release program, the 2004 Rothwell Cabernet is a wine of fierce structure, elegant balance and sheer drinkability. Classic blackcurrant, minty, toasty oak, medium bodied with a juicy pastille richness and firm tannins. Superb right now, it will evolve over many years to come.

A full bodied, intense red with blackcurrant, cedar, and white pepper flavours. Elegant, fine grained tannin gives this wine good potential to age. Excellent with roast meats or BBQ steak.

Named after the famed Johann Gramp's grandson, Hugo, this is the very best Cabernet Sauvignon in the stable. From the very best sites in the region of Coonawarra, this wine shows classic regional mint and blackcurrant on the nose with a silky supple palate, elegant fruit characters, toasty oak and long, fine tannins.

'Black Label' Cabernet Sauvignon, which was first vintaged in 1954, has evolved markedly over the decades. It is arguably Australia's most recognised Cabernet Sauvignon, and has more than any other, helped define Coonawarra. The wine is matured in new and seasoned French oak for 12 to 18 months. A classic Coonawarra Cabernet with pristine dark berry/ cassis aromas, fine grained tannins and underlying savoury nuances, it develops into a rich, chocolaty wine with age. In a super vintage, this wine can look astonishingly like a 2nd or 3rd growth Bordeaux with its pure cassis aromas and cedary complexity. A relatively new addition to the Wynns stable to compliment the Coonawarra Cabernet Shiraz Merlot and the Coonawarra Shiraz, The Siding Cabernet Sauvignon brings lovely varietal and regional character in a Cabernet that is approachable on release, but also benefits from a few years in the medium term cellar. According to chief winemaker, Sue Hodder, The Siding Cabernet Sauvignon aims to deliver a leading affordable Cabernet that showcases exceptional varietal and region characteristics of red cherry, mint and dark berry flavours, while an array of gentle tannins will further reward from short to medium term cellaring.

Wynns John Riddoch Cabernet Sauvignon is the icon Coonawarra Cabernet Sauvignon. Named after Coonawarra pioneer, pastoralist and parliamentarian, John Riddoch, this Cabernet Sauvignon is sourced from the very best of Wynns vast planting in Coonawarra and it only made in the years that best express Wynns strive for excellence. Arguably richer and more complex from comparable styles in the region, John Riddoch Cabernet is highly sought after and extremely limited.

Bright plum in colour, Penfolds Bin 169 Cabernet Sauvignon displays delicate notes of mint and blackcurrant, with a more savory bouquet of semi-dried tomatoes and fruit chutney at the end. A hint of oak and spice adds extra warmth. On the palate a flavour-wheel of spearmint, milo powder, chocolate and black liquorice.

The Malleea (an aboriginal word for 'green paddock') is a very fine exapmle of the classic Australian Cabernet/Shiraz blend. The 2008 is rich, dark magenta in colour, with ripe plums, spice and vanillin oak on the nose. The palate is like a complex fruit cake with layers of fresh berries, black olives and hints of chocolate.
