"Scuro" is a blend of Sangiovese and Shiraz from our Dark Horse Vineyard, co-harvested and co-fermented. Scuro (meaning "Dark") is named for both its Italian roots and for the impressive dark colour that took us by surprise during fermentation. Extended maturation in French Oak Hogsheads has resulted in a powerful and generous wine with a deep ruby hue, rich palate and great cellaring potential. Majestic, intense, full-bodied and tannic, Cos dEstournel is considered the leading wine of St Estèphe. Highly tannic in its youth, over time it develops much much like the great wines of adjoining Pauillac. A true "super second" growth.

The Butchers Block is a traditional Barossa blend made with grapes selected from the Turkey Flat vineyards, including some from the original old vine plantings. It is a blend of Shiraz, Grenache and Mourvédre (Mataro). 'Part of the grapes come from the home vineyard that has some of the oldest vines in the Barossa, planted by Peter Schulz's great-grandfather Ernest Schulz. The wine has the drive, focus and intensity often missing from this Barossa blend; that said, there are both black and distinctly red fruit components, and the tannins are firm.
