Prosecco is destined to be the smash hit of the summer with all of its beguiling aromatic flavours and touch of real fruit sweetness. A multi-national blend of Hunter Valley and Marlborough, it is a classically expressive blend combining the tropical high notes of Sauvignon Blanc with the wonderful length and definition of Semillon. A vibrant and lively well balanced palate with a long and crisp finish.

This Shiraz showcases why the Hunter does medium weight, savoury fruit reds better than most. Its a style you can enjoy now or even slightly chilled down in the warmer months. On the palate: A terrific core of ripe red fruit with supple tannins, creamy depth and complexity and lovely oak and spice integration. A lively, well made, medium-bodied red savoury and soft throughout.

McKelvey Estate continue to produce wines punching above their weight and with Keith Tulloch as winemaker, its easy to see why. In the glass: Delicate pale straw with green highlights. On the nose: Energetic and zesty white and yellow melon with cashew and fine oak spice. On the palate: Finely structured with elegant white fig and white peach, dry, minerally acidity and long, fresh acidity.

Margan Albarino is naturally high in acid and has ripe fruit flavours at lower levels of ripeness.This combination produces a fruit driven wine with great acid finish that needs no oak or residual sugar. The variety has a natural saltiness to it that makes it a fantastic food match.

Although the Hunter is better-known for its unique blend of Semillon Chardonnay, we do also see the occasional Semillon Verdelho, and this one is a cracker!Vibrant pale straw in appearance. Pretty aromas of white peach, lemon, apple and melon. Clean and crisp with Granny Smith and stonefruit notes in a lovely easy-drinking style with soft acidity and a juicy finish.

The Fish Cage Semillon Sauvignon Blanc is from the bank of the Hunter River. A blend of two classic varietals; where the Semillon brings aroma of lemon curd, lime leaf and a textured lanolin palate; the Sauvignon Blanc adds exotic tropical fruit with juicy acidity. The classic and seamless blend has profusion of flavour and a refreshing crisp finish. Fish Cage wines are vibrant, fun and and easy escape. We are often asked, "Why is there a fish in the cage?" Deep yet bright mulberry purple in colour, this Hunter Cabernet – Merlot is a charmer. The aromas show loads of energy, with 80% Cabernet Sauvignon providing fresh florality, opening with briarberry and raspberry. These perfumes open out to deeper signatures of crème cassis and mint, plus subtle background support of vanilla and menthol from fine French oak. Cabernet is supreme on the palate too, delivering long, focussed flavours of raspberry and cranberry with hints of olive. 20% Merlot contributes roundness and depth throughout, with spiced plum silkiness that adds body and softness onto the finish. Tannins are powder-soft, showing the plush satin-like harmony of deluxe French barrel. This elegantly structured blend is definitely a keeper, and will take several years of cellaring to open out. Decanting is ideal if drinking earlier.

French (naturellement), and hand selected Chardonnay grapes for their classic sparkling style and the perfect balance of citrus acidity and white nectarine flavours. Then we added some fizz and undertones of brioche via some bottle conditioning (fermentation in the bottle). And because we picked the fruit early to accentuate the freshness and vibrancy of its flavours, we finessed the edges with a dash of residual sugar to create that perfect harmony between sweetness and acidity.
