Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Tasmanian Dry Gin, A classic London Dry style with a Tassie twist has 11 botanicals that hero the native pepperberries and herbs found on the way to Cradle Mountain. Wildly fragrant with alpine freshness, juniper, coriander and Tasmanian highland pepperberries with a hint of liquorice root.

Shirl the Pearl 2020 Harvest, a seasonal edition Cumquat Gin with fresh uplifting notes, zesty characteristics, and a long finish. Expect refreshing waves of orange blossom. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.

Locally sourced, Hippocampus vodka is distilled in Western Australia. The vodka is twice distilled and not filtered, which lends a smooth richness and subtle flavour. Its full body and depth mean it lends itself well as a cocktail base.
