Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Joined by a supporting cast of single estate Australian coriander seed, Tahitian lime and lemon scented gum, the resulting spirit offers a supple start on the palate that makes way for a bold balance of citrus and herbaceous intensity that dovetails to a profoundly pine-laden dry finish.Bone Dry Gin rigorously balances a huge amount of raw power with nuance, poise and complexity to reveal an elaborate juniper experience that makes a great G&T and an even better Martini. nspired by the view of the Blue Mountains from the distillery window, Blue Mountain Gin is handcrafted in small batches and infused with mint and rosemary grown on the farm and native Australian pepper berry. Bathurst Grange is a family-run distillery producing craft gin, whisky and spirits. It was founded in 2014 on working sheep farm and heritage estate, 'The Grange', established in 1823, on the Macquarie Plains just outside Bathurst. Made in Australia

Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Drink it straight over ice, in a classic martini or a negroni.

Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.

Fashioned in the style of a London Dry, this contemporary expression contains fresh limes, mint as well as pink pepper, ginger, mace, cassia, and cardamom. Adelaide Hills Distillerys Sunset Gin is inspired by those closing moments in the day that throw panoramic views across the sky. Shirl the Pearl 2020 Harvest, a seasonal edition Cumquat Gin with fresh uplifting notes, zesty characteristics, and a long finish. Expect refreshing waves of orange blossom. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.

A contemporary tropical fruit salad gin packed with flavour that tastes like a holiday. Opened with much fanfare and many wide-eyed guests on the 15th August 1971, our iconic Big Pineapple is testament to the magic of big dreams and a bit of fiber glass. What a sight it was, (and still is) to see! This delicious sub-tropical fruit salad gin celebrates that day and the Sunshine Coasts most loved tourist attraction. Pineapple, passionfruit, strawberry, mango, vanilla and coconut combine to make a surprising, delightful and evocative gin. Pot Distilled in the hinterland rainforest, Sunshine & Sons Pineapple Parfait Gin has all of the aromas of the 1970's Big Pineapple Parfait Desert; Pineapple, strawberry, passionfruit and coconut with a smooth crème Brule feel of vanilla tapered lift. On the palate it is very pretty, aromatic and bursting with tropical fruits. Soft, perfumed, very textured, silky, jelly like structure, powerful Sunshine Coast flavours with floating fusions of Pineapple and passionfruit.
