Fruit for this wine is sourced from nine rows of P58 clone chardonnay planted on East West rows directly outside the winery doors. Once harvested the fruit was whole bunch pressed to French oak barriques (50% new) with Indigenous yeast fermenting the un-clarified juice. Barrel maturation took place on lees over the next ten months during which the chardonnay was stirred fortnightly.

Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. A medium bodied Chardonnay that is also vibrant and rich in flavour. Sweeter tropical flavours of pineapple, papaya and nectarine are present. A good depth and even finish.

Yabby Lake Chardonnay has a lifted and fine nose, which is complex and beguiling. The palate is fine and tightly wound together with a precise mineral intensity. Great length and poise, the wine finishes with great purity. Stored carefully this wine will age gracefully for at least eight years.
