Warramate Chardonnay
The grapes used to craft Warramate Chardonnay were whole bunch pressed, and fermented in French oak barrels and stainless steel. This led to the creation of a pale straw coloured wine with light green hues highlighting its edges. The attractive bouquet is dominated by intense aromas of orange blossom, lemon citrus peel and sea spray minerality. This enticing Chardonnay flaunts a crisp palate containing tangy grapefruit, white peach and citrus flavours, coupled with light saline notes. A firm acid line balances these vibrant characters to culminate in a focused and lengthy finish. Crafted to be relished upon release, this wonderful white wine can also be cellared for 5 years. It tastes great with vegetable terrines, steamed fish and risotto.
Paringa Estate The Paringa Chardonnay
Fruit for this wine is sourced from nine rows of P58 clone chardonnay planted on East West rows directly outside the winery doors. Once harvested the fruit was whole bunch pressed to French oak barriques (50% new) with Indigenous yeast fermenting the un-clarified juice. Barrel maturation took place on lees over the next ten months during which the chardonnay was stirred fortnightly.

Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. Onannon Mornington Pinot Gris
The fruit for this Onannon Mornington Pinot Gris was handpicked and pressed immediately into the tank. It is then settled overnight and racked to both tank and old barrels. A cool fermentation took place over two months during which the wine was stirred regularly to increase texture. Resulting in wine with great aromas such as ripe pears, mixed stone fruits with hints of cooked green apple in the background. It then leads to a full flavoured, textured palate with a delightful finish.
