Returning to Australia with the winemaking bug, Sams style involves letting the varietal characteristics of the grapes shine through, by using natural/wild fermentation and malolactic fermentation, with minimal additions and no finings. Having a nice meal with friends and family is one of his favourite things, so he crafts the wines to be fun, drinkable and best enjoyed with food and good company.
