Tucked away nicely in the Adelaide Hills, Sidewood Estate have made an art form out of crafting some of the very best single vineyard cool-climate wines available in Australia. Owen and Cassandra Inglis purchased the boutique property in 2004 and immediately set about making their vision become a reality. Their Sidewood Shiraz displays that vision to perfection. Attention to detail is the key here which enables flavours of red cherry, currants and dark plum to shine through along with hints of cinnamon and spice. The texture is beguiling and gives promise to a wine that will age for up to a decade.

The Savaterre vineyard is elevated at 430m above sea level and is farmed along organic principles. No pesticides are used. An incredibly complex, lifted, lively and intense nose. Exotic aromas of smoked meats, dried red rose, allspice, clove, dark plum, dark cherry ,blackberry, mulberry, mandarin, violets, sandalwood, bay and funky undergrowth. High up in the Adelaide Hills, Paracombe is owned and operated by the Drogemuller family, which it has passionately done since 1983. Sourced from both estate and selected grower fruit, Paracombe Shiraz shows wonderful ripe fruit aromas with a delicate cool-climate aspect. Notes of cherries, plums, pepper and spice are notable along with a palate of layered spicy fruit and a fine tannin structure.

A classic Fromm Vineyard Pinot Noir, a multi-layered wine, very concentrated without appearing big or heavy, with positive tannin support. At its best it shows a masculine charm with a distinct terroir-related identity, aging superbly.

Spinifex Papillon is a vibrant and luscious red from the Baross Valley that is a blend of Grenache, Cinsault and Mataro. Made in the typical modern Australian mould, the Papillon is bright and aromatic with lifted cherry, red currant and spicy raspberry. A very perfumed wine with earthy flavours of beetroot and white pepper which lends itself to being a terrific food style wine with lovely acid structure and a medium weight.
