Ukiyo Blossom Gin
Drawing on over a century of distilling wisdom, Ukiyo Japanese Blossom Gin is born in Kagoshima from a base of locally grown rice that is distilled into a traditional shch spirit. We redistill our shch with juniper, regional citrus, cherry blossom and native botanicals, always exercising restraint in the pursuit of clarity and perfection. The fruits of this endeavour are born out in the delicate blossom aroma that emulate those found in the mountains and coastline surrounding our home in Kagoshima.
Isle of Harris Gin
A beautifully designed bottle captures the elemental nature of the Isle of Harris, while its contents reward the discerning gin drinker with maritime pleasures. The inclusion of local, hand-harvested Sugar Kelp speaks of our islands deep connections to the sea while working with eight other carefully chosen botanicals.
Six Dogs Honey Lime Gin
Six Dogs Honey Lime is an irresistible combination of farm honey, home-grown limes and the finest botanical spirit. Sip it and youll taste classic notes of juniper, coriander and the earthy tones of angelica, complemented by a bite of zesty limes and a subtle infusion of honey to soften and sweeten the overall taste. This delectable drink is the result of a sustainability project that began when South African bee conservation company, Bee Smiths, approached Six Dogs Distillery to relocate distressed bees to the farm on which the distillery is situated. Their new home, found on the intersection of the Fynbos and Karoo biomes, proved to be the ideal location for the bees.
Prohibition Christmas Gin
Prohibition Christmas Gin is fast becoming a hallmark of Australian Yuletide traditions, and our 2021 vintage is no exception. Once again, it features all the luxurious complexity you’ve come to expect, including classic ‘Christmas pudding’ flavours from ingredients naturally macerated in our citrus-forward Australian dry gin. This season’s Adelaide Hills figs deliver more flavour than ever before, providing extra depth and complexity to support a backbone of dry gin, macerated cherries, and vanilla. Cinnamon, nutmeg, cloves, ginger, and a touch of star anise harmonise to create a rich spice hit. As always, it plays perfectly in your favourite Christmas cocktails, like a French 75 – on ice with a glacé cherry, or over Christmas pudding, custard, or ice-cream for a decadently festive dessert. The Bottle If you know and love this product, you’ll appreciate that the packaging is different every year, and is always a nod to the richness of the spirit within. This year, lustrous gold bottles hand-made in the Cognac region of France and are adorned with dripping white wax seals and delicate white print. This may be our most beautiful bottle yet!

Christian Drouin Le Gin Carmina
After the launch of Le Gin de Christian Douin in 2015, the only gin made from more than 30 varieties of cider apples and 7 herbs selected for their perfect combination of apple and juniper aromas, Guillaume Drouin has created a new blend dedicated to red fruits. Carmina is made with the same principles as the original version of Le Gin; each botanical or fruit is macerated and redistilled separately in order to optimise the extraction of aromas. The distillates are then blended before bottling. This time the bouquet is summery. It combines flowers and fruit with the use of raspberry, blackcurrant, elderflower, vanilla, lemon and orange in addition to juniper and cider apple varieties from Normandy.
Four Pillars Navy Strength Gin
Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.
Gabriel Boudier Saffron Gin
Big Tree Distillery Claude Navy Strength Gin
Robust and wonderful, Claude Navy Strength gin has a hint of the Australian bush. Our heavy hitter farm crafted gin that is full flavour (Navy Strength) with a delicate touch of Southern Sassafras foraged from the Victorian bush. This one is certainly worth adding to the drinks Trolley. Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, bay leaf, orris root, cassia bark, coriander, star anise, angelica and Australian native Southern Sassafras. Serving Notes: Beautiful just neat on ice or as Gibson Martini. Or we still love it as a G&T and we use only good Australian tonics such as Strange Love No8.
