KI NO BI (The Beauty of the Seasons) is inspired by tradition and distilled, blended and bottled in Kyoto. We collaborate with the craftsmen and artisans of Kyoto who refine their skills in the legacy of the generations before them, working continuously in the cultural heart of Japan. Japans first dedicated gin distillery was founded with the sole intention of creating the finest gin possible: made from rice spirit and, wherever possible, using locally sourced botanicals, including yuzu, gyokuro tea and sansho pepper. The Founders are inspired by Kyoto culture, art, craftmanship and agriculture.

Frail opening aroma gains intensity after a short breathe to yield an attractive lemongrass and coriander accented bouquet with a delicately peppery edge. Better known as a Calvados producer, Guillaume Drouin continues exploring new flavour associations in his small batch gins. Seeking a perfect match with apple and juniper, Drouin has signed off on a new blend devoted to red berries. A "one plant at a time" distillation policy lets Drouin keep adjusting proportions so as to obtain the best possible result. Tasting note: [2018 edition] Clear. Pure, lifted aromas of apple sauce, ripe raspberries, fresh orange peel and earthy juniper. Drops a notch in intensity after 2-3 minutes air contact. Delicious fruity / floral delivery combines elderflower, semi-ripe blackberries and refreshing citrus peel to great effect. Ends delicately minty, spicy, expertly balanced with fine astringency.
