A limited-edition 30-year-old single malt from Mortlach, Midnight malt was initially matured in a combination of refill American oak and European oak casks, before being finished in Bordeaux wine, Calvados and Guatemalan rum casks, then married and further matured in custom quarter casks. A release of just 350 limited bottles. NOSE A mellow nose with some initial prickle. This settles in time to reveal a savoury and faintly herbal top note, suggesting pork crackling sprinkled with dry sage. PALATE A richly winey, apple fruity and mouth-watering start delights the palate, backed by a long spicy intensity with a delicious black pepper note that really persists. FINISH Long, sweet and deep-flavoured, with a light peppery spiciness. With water, still sweet and softer, with the spicy heat joined by a suggestion of mint chocolate in the lingering aftertaste.

More approachable, but still definitely Talisker. Talisker Skye was introduced in early 2015, named after the beautiful island on which the distillery resides. This expression brings with it a more well-rounded and sweet flavour profile packed with fresh citrus, sweet smoke, peppery spice and traditional Talisker maritime notes. It's matured in a combination of refill and toasted American oak casks, with a slightly higher proportion of toasted casks. The Bladnoch Bicentennial Release has been matured for 29 years in Oloroso Sherry casks and finished in Moscatel casks for a final 18 months. Only 200 bottles were made to celebrate 200 years, making this an extremely rare release. Colour: Chestnut gold. Nose: Lovely rich old Sherry aromas, acacia, honey, beeswax, orange, fruitcake, a whiff of coffee and a hint of chocolate. Palate: Soft and silky Sherry flavours. Dark chocolate, ginger, spicy citrus notes, balanced oak and a hint of ground black pepper. Finish: Warming with a hint of honeyed spiciness. Satisfying and long.
