Aged for 12 years in sherry barrels, the Okayama 12 Year Old Barely Sherry Cask Shochu has a taste of equal parts elegant and mellow. The aging process combines the best elements from sake and scotch, creating a drop excellent for both savouring and sipping. The nose has exquisite aromas of brioche, sherry, oak, and barley. Notes of summer citrus float across the palate giving way to the soft sweetness of caramel and vanilla. A long, textured, and creamy finish.

Kyoya Hinata Small Batch Gin is distilled with generous amounts of juniper complimenting the piny flavour and provides this gin its signature warmth. Mars Shinshu was founded in 1949 but didn’t start making whisky until their distillery was nestled high in the Japanese Alps in 1985. This is a limited release Mars Iwai Tradition blended whisky released in 2021 that has spent extra time maturing in Pedro Ximenez Sherry casks which give a delicious sweetness to the whisky. Pedro Ximenez is a Spanish white grape variety, and this sherry is well known for its intense sweetness as a dessert-style sherry. Showing lovely amber colour with sweet notes such as brown sugar, maple syrup on the nose. It has a smooth mouthfeel and rich texture with sweet honey burned sugar cane and sweet peat on the palate. A distinctive rich full body finishes with cacao and a hint of bitter chocolate. Complex and well-balanced whisky.

The Kurayoshi Pure Malt Sherry Japanese Whisky

The Kurayoshi Pure Malt Whisky Sherry Cask is a boutique Japanese whisky produced by the Matsui distillery..This is a 100% malted barley whisky, sourced from distilleries around Scotland, before making their way to Japan, where it is blended with Japanese Whisky, aged and cut to proof with the legendary volcanic stone filtered waters of Tottori Prefecture. This means that the profile is brighter that you would expect in this age-range. This brings out more herbal and citrus notes while maintaining a nice complexity. Ki No Bi Kyoto Dry Gin

Ki No Bi Kyoto Dry Gin is a uniquely Japanese expression of the classic English spirit. Master Distiller Alex Davies of the Kyoto Distillery uses a spirit base distilled from rice and adds botanicals like yellow yuzu, hinoki (cypress) wood chips, bamboo, gyokuro tea, and green sanshō (Japanese peppercorn) berries that are designated into: base, citrus, tea, herbal, spice, and floral. Each botanical category is steeped into the rice spirit, which is then individually distilled before blending together. It is brought to proof using water from Fushimi, known for its purity. Ki No Bi translates to "the beauty of the seasons"

It’s behind these distillery walls that Suntory carefully ages its Japanese Umeshu (plum liqueur) in toasted Yamazaki casks. This is a rich amber blend perfect for fans of the Hibiki 12, as some of the whisky blended into it was aged in these umeshu casks.
