Created by legendary Japanese bartender Danny Aikawa who, in 1979 dreamed of creating a truly unique Japanese liqueur from Ume fruit. As he could only attempt to create this Ume based product once a year, all up it took 17 years to develop the recipe (which is a closely guarded secret). Hoishiko is produced once a year after the Ume harvest in Wakayama prefecture. The Ume are macerated along with a secret blend of spices in alcohol. After several months the Ume and spices are removed and sugar is added to balance out the tart Ume flavour.

The Ine Mankai from Mukai Shuzō is produced using an ancient strain of red rice, along with a with a white rice, creating a rose petal coloured sake. In provincial villages and towns within Japan red rice has been cultivated and used in traditional celebrations for centuries, but it is extremely rare to see it used commercially. While studying at Tōkyō University, Kuniko met Professor Takeda, and was encouraged to create a sake with the red rice he knew grew locally in Kuniko's hometown area of Ine. In May 2000, Kuniko released her red rice sake calling it 'Ine Mankai' or ‘Ine in Full Bloom’. It’s well balanced levels of acidity and sweetness make it perfect for drinking with a wide variety of food. Complex cherry & vanilla aroma with unique sweet/tart cherry & pomegranate flavours with a savoury, umami rich palate works equally well with savoury dishes or sweet.

Mars Iwai Tradition Japanese Whisky is soft and rounded, yet full bodied and mellow. The nose gives sweet honey, leading to a complex, peaty full bodied palate which gives sweet peat, orange marmalade, maple, burnt sugar cane, cedar and cigar.

The Shin Blended Whisky is crafted by Mr. Ken Usami, the master blender of Shinobu Distillery who selected finest malt whiskies and finished them in casks made of Japanese Oak, Mizunara Wood. “Shin” stands for “Integrity”, one of the core principles of Samurai tradition.The blended expression contains 50% malt and 50% grain. Kujira Ryukyu Whisky Series is owned by the Shin Group Corp., one of the biggest Japanese liquor distribution companies focusing on unique and high- quality Japanese whisky. The Kujira whisky are produced by Shin Group’s strategic partner, Masahiro Shuzo, in Okinawa. After the World War II, the demands of whisky from stationed U.S. military were very high. In order to satisfy the demands, some local distilleries tried to make whisky by rice, and age in oak barrels. Soon, the whisky was sought-after and given the name “Ryukyu Whisky” by stationed soldiers. All Kujira Whisky are distilled by 100% Indica rice and Okinawa’s unique “black koji” for the mashing before maturing in oak casks that give the whisky an unique character. Okinawa is part of the Ryukyu Islands, which are a chain of subtropical islands. Thanks to the island’s warm climate, whisky takes less time to mature and thus has a stronger aroma and a bolder taste. The special flavor from Indica rice further gives the whisky a long and unique aftertaste. Kujira means “whale” in Japanese. The whale is a symbol of generosity and peace. Long plagued by war, the Ryukyu Islanders consider the whale as the guardian of peace and nature.
