A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. The core character remains true to the heart of Glenfiddich signature 12 year old with a sweet, fruitiness rich in fresh pear and crisp apple. the flavour is deeper, sweeter and more oaky with light spice, delicate hints of dried fruits and a touch of baked apple.

This special Laphroaig is crafted from carefully selected casks from each of the distillery's key styles - with one notable addition. The heart of this single malt is drawn from a final maturation in new American Oak casks, a rarity used for Scotch whisky maturation. With spirit selected by the master distiller from Quarter Cask, PX Cask and Triple Wood (European Oak casks) and a final addition of 10 Year Old, the whisky represents a subtle blending of peat, oak and sweetness. This is a full-bodied expression, featuring Laphroaig's trademark 'peat reek' matched by an additional layer of complexity and depth brought about by the fusion of the maturation styles and different oaks.

Nestled away in the far north of Scotland's Highland region is the distillery of Clynelish. Situated at Brora on the stormy North East coast, this 14 Year Old single malt has been matured in specially selected oak casks and then bottled at the full 46%. Displaying a waxy nose with a hint of sugar and florals, the whisky arrives on the palate with power and flavours of signature spice and maritime saltiness.

A gentler, more feminine and food friendly expression that Islay lovers should get to know. Despite being the largest distillery on Islay (in terms of production anyway), nearly all of Caol Ila's output ends up in blends, so much so that until 2002 when the 12-year-old was released, independent bottlings were the only recourse for malt hunters. The distillery's gently fruity-smoky style sets it apart and comes down to the production process: "...although it receives the same spec of malt as sister distillery Lagavulin, Caol Ila’s distillation regime – longer fermentation, higher cut point, taller stills, helps to reduce the heavy phenols." Tasting note: Pale straw colour with a subtle green blush. Aromas of soft, sweet peat - smoked trout, a hint of lanolin and some baked citrus. Rounded, pure and impeccably clean from start to finish, the palate offers semi-sweet smoky-fruity-oily flavours counterpointed by super fine tannins. Perfect balance. Located in Islays capital of the same name, Bowmore uses a combination of dedicated craftsmen, pure water, smoked peat and traditional manufacturing techniques to ensure that their whisky tastes the same as it did when it was first distilled in 1779. The 12 Year Old Single Malt has a nose of lifted lemon and honey that are bound together with the distinctive Bowmore smokiness. On the palate, the whisky is warm and delicious with subtle dark chocolate and peat smoke.

Matured first in bourbon barrels then Oloroso casks, there's no finer example of a sherry cask finish than our 15 Year Old. It's the final three years spent in Oloroso sherry casks that gives Bowmore 15 Year Old the rich, deep colour and robust warming finish.
