Pocketwatch Pinot Noir was produced using grapes grown in Mornington Peninsula and Yarra Valley. It is a delicate red wine exhibiting subtle hints of oak from its nose. Displaying bright fruit characteristics, the palate is filled with red fruit flavours of cherry and raspberry combined with a slight earthy appeal and nuances of oak. Forester Estate is owned by Vignerons Kevin and Jenny McKay. It’s situated in Yallingup, in the northern Margaret River region. The superb wines are made by Todd Payne who has had “a distinguished career, starting in the Great Southern, then the Napa, Plantagenet, Esk Valley in Hawke’s Bay, and on to the Northern Rhône” (Halliday). The Bin 389 style evolved as a result of experiments, by Max Schubert, in the 1950s to develop a highly individual wine using a blend of Cabernet Sauvignon and Shiraz with compatible oak treatment. Bin 389 combines the elegance of Cabernet Sauvignon with the richness of Shiraz and demonstrates the traditional Penfolds' trademark - balance between fruit and oak, giving the wine character and longevity.

The bouquet is layered with abundant aroma's of plum pudding, cigar box, blackberries & chocolate. It has an excellent length of flavour, velvety tannins and hints of smoky oak. 71% Shiraz and 29% Cabernet Sauvignon are separately fermented & matured in a combination of new French & American oak before final blending.
