The Macallan Double Cask 18 Years Old, a perfectly balanced single malt whisky matured for 18 years in both American and European sherry seasoned oak casks. Sherry seasoned American oak adds delicate vanilla to the subtle spice of European oak, delivering a whisky with a sweeter, warmer taste and character.

Goodradigbee's Jarrah single malt is completely unique. It is made from Scottish Highland single malt and matured in Goodradigbee's whisky maturation cubes made from Western Australia's imposing Jarrah, an ancient local hardwood. The spirit is young on the nose but genuinely surprises when tasted. Complex flavours compete at first - sweetness and citrus, followed by cinnamon and sometimes, a touch of spice. Jarrah is different, in a good way. Be prepared to be surprised.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. An easy-drinking style, taking the distillery's classically rugged character and softening it out, while maintaining the smoky and sweet notes the distillery is known for. More approachable, but still definitely Talisker. Talisker Skye was introduced in early 2015, named after the beautiful island on which the distillery resides. This expression brings with it a more well-rounded and sweet flavour profile packed with fresh citrus, sweet smoke, peppery spice and traditional Talisker maritime notes. It's matured in a combination of refill and toasted American oak casks, with a slightly higher proportion of toasted casks.
