Maison Audry Cognac Fine Champagne EXCEPTION 40y to 60y
EXCEPTION VERY RARE COGNAC, WHOSE IMPRESSIVE AROMATIC RICHNESS ENHANCED BY NUANCES OF RANCIO OFFERS AN EXCEPTIONAL COMPLEXITY. OLFACTORY NOTES The nose is rich, complex, powerful and long at the same time, with a nice note of rancio. Spicy notes of cinnamon, vanilla, delicate woody nuances of old oak, cigar box and undergrowth. Beautiful fruity and candied nuance. An astonishing freshness for its great age. TASTING NOTES Exception is a very rare cognac, whose aromatic richness is enhanced by nuances of tertiary notes. A cognac that will reveal a wide aromatic palette throughout the tasting. The palate is delicate and lively. The complexity of the rancios and the exoticism of the fruit perceived on the nose are quickly revealed. Warmer aromas of nuts and prunes, coffee beans and cocoa are coming smoothly. Complex and impressive length in the mouth. At the start of its ageing, this cognac undergoes a rapid passage in new barrels to keep the natural aromatics of the eaux-de-vie. It will then be transferred to an old barrel to continue its development in a humid cellar to promote its roundness and accentuate the rancios. This blend is a mix of eaux-de-vie with and without lees, which comes from the terroirs of Petite and Grande Champagne only, aged between 40 and 60 years old. With its ABV of 43%, the reduction of eaux-de-vie in a natural way is favored. This high degree offers a more accomplished taste discovery as well as a better perception of aromas. This cognac contains no additives, sugar or caramel. Only a slight filtration is carried out to preserve its aromatic qualities as much as possible.
JEAN FILLIOUX COGNAC GRANDE CHAMPAGNE
Jean Fillioux, a semi artisan producer of cognacs from the very special Golden Triangle of the Grande Champagne region, itself the very best origin for cognacs, is listed in the 10 top trending brands by Drinks International. It should not be regarded as a magnificent achievement since the rest of the group is mostly the usual suspects, the well known very “commercial “ brands. However, it is proof that small artisan producers are being noticed for their superior quality, by even, the large mass of non-connoisseurs more attuned to the Big Houses of Cognac. To celebrate, Jean Fillioux has reserved for Cerbaco a barrel of their 1992 vintage just bottled as a Special Cerbaco Label. Vintage cognacs are as rare as hen’s teeth, even more so from the best part of Grand Champagne, and 1992, freshly bottled, perfectly proves the superiority and individuality of artisan production. Harvested and distilled in 1992, this Cognac was matured in a French recent loose grain oak cask, in a cool damp cellar. Tasting Notes: Nose: Fresh and floral on the nose with citrus fruit, syrupy apples and refined orchid tones. Palate: Round and complex palate with beeswax, ripe plum, candied orange and chocolate. Finish: Long and lively finish with persistent aromas of baked pastry, light spices, and cherry.
JEAN FILLIOUX SUBTIL & SO COGNAC VSOP GRAND CHAMPAGNE
Subtil & So, the new VSOP Cognac Grande Champagne by Jean Fillioux. With the noble bottling, the house once again proves that the Grande Champagne, originally known for its old cognacs, can also produce excellent younger qualities. The proof: a coveted gold medal from the Spirits Selection by Concours Mondiale 2021 and a wonderfully harmonious profile of fruity freshness and warm spiciness. The 4 to 6-year-old VSOP comes from the picturesque La Pouyade winery, which has been family-owned since 1894 and is completely independent to this day. It is surrounded by 25 hectares of the finest white wine grapes. They thrive in the "Golden Triangle", the heart of Grande Champagne. They are cherished and loved in the fifth generation by Christophe Fillioux and his family, who are one with their vineyard. You can taste that in their extremely aromatic cognacs – and today they are valued around the world. Tasting Notes: Nose: fruity and delicately floral. Palate: Fresh figs and citrus blend with nutmeg, almond paste and orange blossom. Finish: Enjoyable and warming with subtle spice.
